TOMATILLO SALSA
Oh look, it’s another mexican post! But this one is totally different.
This is a tomatillo salsa and like nothing else on ALF.
Today’s blogpost is made from fresh tomatillos, sweet yellow onion, jalapeno’s, cilantro, and lime juice. This is a super quick salsa that you can whip up in minutes without roasting or cooking.
The only thing you have to do is throw it all in a food processor or chopper.
I made this tomatillo salsa because of my corn tortilla taco obsession lately. I have been all about soft corn tortillas (2 per taco) with meat, chopped white onion, and chopped cilantro. And then covered in a sweet tomatillo salsa. At least that’s what I normally get when I’m out at a Mexican restaurant.
But this time I wanted to try make it for myself and AU to compliment the most delicious carnitas tacos.
We served our fresh salsa with soft corn tortillas for me and soft flour tortillas for AU. We are that stubborn that we have to have two kinds of tortillas, I’m not a huge fan of soft flour tortillas for tacos (either crunchy tacos or soft corn are my favorite).
I used my fantastic new food processor that I talked about in this post. It’s a hand blender that comes with 5 attachments and a food processor! I used the food chopper and chopped all the fresh veggies. It left my salsa without chunks and it worked perfectly, just gets me so excited.
This salsa is perfect for topping tacos, enchiladas, and taco salads. It is also the perfect salsa to eat with chips on it’s own.
I think this salsa could have more of a kick to it, it is pretty mild as is so if you want it any hotter I would add more jalapeno’s or red pepper flakes! Or you could use less lime juice to kick up the heat as well.
