stuffed red peppers
Did you see what we ate this weekend? From the fair to Chinese food and circling around to Krispy Kreme. I think I ate enough food, sugar, and fat for a whole week in only just two days.
It forced me to put my foot down, and insist on a healthy meal for Monday evening; enter stuffed red peppers with brown rice, sausage, baby tomatoes, and sweet onion.
The flavors in this are so complex but so simple at the exact same time. The seasoning is basically salt, pepper, and a slight touch of paprika. But the hint of sweetness from the diced onion and roasted juicy tomatoes with the spicy sausage really hits all the taste buds.
I really enjoyed this dish, and we all know I’m not really a health nut and I like my butter and most importantly sugary stuff but trust me on this, you have to make these peppers. They are so easy and like I mentioned earlier, there are like no ingredients at all. Like for real.
Here is my tip for eating these, dump the mixture out and slice the peppers as you go and shove some mixture on your fork with each pepper piece (easy right?), that’s how I enjoyed mine.
Okay so I lied this isn’t totes healthy, I topped the pepper halves with some parmesan cheese (tehehe I love cheese). But you don’t have to do that of course. Be healthy and resist the cheese! Or be naughty like me and indulge your taste buds and your bad side at the time.
