It must be the season because we’ve been obsessed with chips and dips these last few weeks!
SPICY MEXICORN DIP is quite possibly the best chip and dip recipe and we’re sharing it with you today.

Most likely every single person reading this post has made this recipe before or at least enjoyed it somewhere or another in their lives. But let us just tell you, this one is different! It’s better and more tasty and the best one we’ve been able to find and devour.

With the holiday season, all the parties, all the potlucks, and all the snacking we’re all doing…. chips & dip feel like the perfect solution.

A little crunch, a little creaminess, a little texture, a little spice, and a little addictive flavor, this dip has it ALL!

Not only is this a super-fast recipe and very simple recipe, it tastes like a million bucks. Think almost like a pimiento cheese (without pimientos) and WITH corn. That’s basically the definition of this.

And can we just discuss the scoop fritos. Those are quite possibly the best “CHIP” to any dip. First of all they’re scoopable. Second of all they’re actually thick enough to get into the creamy dip without breaking or cracking. Third of all why would you not have a corn chip with a corn dip?

What we love about this Spicy Mexicorn Dip recipe:

  • It’s a no bake kind of deal
  • HOT rotel is used to give it a nice kick with jalapeno’s instead of chili’s (feel free to use regular rotel instead for a less spicy taste)
  • Pre-shredded sharp cheddar cheese is used! (and lots of it!)
  • A one to one ratio of mayonnaise and sour cream are used as the creamy base instead of one or the other
  • Instead of just canned crisp corn, Mexicorn is used, which has added flavor with red and green peppers

We added a little more cheese than normal so it had a little more sharper taste because of the sharp cheddar. Light mayonnaise and light sour cream was also used in this recipe to lighten it up and feel less guilty while eating all of it.
Feel free to use full fat mayo and sour cream, because #treatyoself and also #youdoyouboo.

And most importantly it’s just the best!

Think addictive and all you can eat and this recipe actually makes quite a lot of dip so it’s perfect for parties or as a dinner appetizer for friends and fam.

With New Year’s Eve right around the corner, this dip can be center table and steal the show. It’s that good. Even AU liked it and actually ate it. And if that doesn’t convince you (someone who does not even like vegetables but is willing to keep trying, GO BABE!) than I’m not sure what will!

Other things to serve with this are little toasted baguettes, tortilla chips, wavy ruffles (also the best for chip dips) and even crackers.
