SPICY CHICKEN TACOS WITH GARLIC CILANTRO SLAW
One of our favorite things to make at home some nights are tacos, just like these Spicy Chicken Tacos with Garlic Cilantro Slaw.
It’s an easy weeknight meal that you can include fresh veggies in with lots of delicious flavor.
These Spicy Chicken Tacos with Garlic Cilantro Slaw are served on charred corn tortillas. Smashed avocado is smeared first, topped with spiced rubbed cubed crispy chicken.
Adding to the spice level, shredded pepper jack cheese is sprinkled with fresh cilantro on top of the chicken to give a little more punch.
Cilantro lime garlic sauce is blended and mixed with thinly sliced green cabbage to create the most wonderful crunchy taco topping. Lastly, fresh squeezed limes top the whole taco off to give you that street food bomb flavor.
The best part? These tacos are start to finish thirty minutes tops and you can make them your own with whatever ingredients you have in the fridge. Top tacos with caramelized onions, chopped red onion, salsa, pico de gallo, sour cream, fajita veggies, and so on. Mix and match to suit your taco night, especially on a Tuesday, #tacotuesday peeps.
Use flour tortillas instead of corn if you’re feeling dangerous, or if you’re not down for the gluten free corn ones.

Ingredients
CHICKEN
- -1 CHICKEN BREAST, BUTTERFLIED IN HALF & CUBED
- -1 TABLESPOON OLIVE OIL
- -1 TEASPOON GARLIC, MINCED
- -1 TEASPOON CHILI POWDER
- -1/2 TEASPOON GROUND CUMIN
- -1/4 TEASPOON ONION POWDER
- -1/4 TEASPOON GARLIC POWDER
- -SQUEEZE OF LIME
- -S&P
SLAW
- -1/4 CUP VEGGIE OIL
- -1/4 CUP WATER
- -1/2 CUP CILANTRO LEAVES
- -1 TABLESPOON CHIVES OR GREEN ONIONS
- -2 TEASPOONS GARLIC, MINCED
- -S&P
- -1/2 CUP SOUR CREAM OR GREEK YOGURT
- -2-3 CUPS SHREDDED GREEN CABBAGE
TACOS
- -1 SMALL AVOCADO, SLICED
- -4-6 CORN TORTILLAS
- -CILANTRO
- -PEPPER JACK CHEESE, SHREDDED
- -LIME WEDGES
Instructions
CHICKEN
- -COMBINE ALL INGREDIENTS AND MIX, LET SIT FOR 10-30 MINUTES
- -HEAT OIL UNTIL HOT AND COOK CUBED CHICKEN ON MEDIUM HIGH UNTIL BROWNED, SET ASIDE
SLAW
- -BLEND ALL INGREDIENTS EXCEPT CABBAGE, TOSS SAUCE GENTLY WITH SHREDDED CABBAGE, SET ASIDE
TACOS
- -USE OPEN FLAME TO CHAR TORTILLAS, OR HEAT IN A FLAT PAN WITH COOKING SPRAY
- -SMASH SLICED AVOCADO ON TACO FIRST, TOP WITH CHICKEN, CHEESE, AND SLAW
- -GARNISH WITH CILANTRO, EXTRA SAUCE, AND LIME JUICE
