SOUTHERN LIVING SALAD
One of my favorite ways to get my greens in is through gourmet salads, like this Southern Living Salad that we’re sharing with you today. I find that on most days I don’t want to be healthy at all, and not to mention AU doesn’t even like fruits or vegetables which makes it that MUCH HARDER! But on most days I’m really not feeling a vegetable or steaming something so I make a side salad.
It might sound boring but it’s the opposite, it’s a win win because it’s a veggie that actually tastes GOOD.
For example, this Southern Living Salad is a simple scrumptious salad. But the title doesn’t state the amount of flavor it really has in it.
The nuts in this salad are not normal nuts, they’re candied walnuts which are the best type ever.

Who doesn’t love sugar?!
A simple vinaigrette is made with red wine vinegar to emanate pickled red onions for the perfect tang. You get all the real taste of pickled red onions without taking the time to actually pickle them. Garlic and herbs are mixed into the vinaigrette to add more depth. Homemade vinaigrette’s are the best way to really get the REAL salad experience.
You know what I mean, right?!
Fresh spinach leaves and mixed greens are tossed with crumbled goats cheese, the nuts and then the salad is ready for the vinaigrette!
By far the best part of this Southern Living Salad is that the ingredient list is as short as it gets. It’s easy to pull together with what you have in the fridge. Substitute the greens you have available as anything will work. Use feta instead of goats cheese or even mozzarella or parmesan.
Versatility as it’s best makes this easier than ever and gives you no excuse to say no to those good o’l greens.

Ingredients
- SALAD
- - 1 HEAD RED & GREEN LEAF LETTUCE CHOPPED
- - 1 CUP SPINACH LEAVES LOOSELY PACKED
- - 1/3 CUP WALNUTS CHOPPED
- - 1 TABLESPOON BUTTER
- - 1/4 CUP BROWN SUGAR
- - GOATS CHEESE CRUMBLED
- DRESSING
- - 2 TEASPOONS WHITE SUGAR
- - 1 TEASPOON GARLIC MINCED
- - 1 TEASPOON OREGANO
- - 1/4 CUP RED ONION CHOPPED/MINCED
- - 1/2 CUP RED WINE VINEGAR
- - 1/2 CUP VEGGIE OIL
- - PINCH OF PARSLEY CHOPPED
Instructions
- SALAD
- - MELT BUTTER IN A PAN AND TOSS IN WALNUTS
- - ONCE COVERED IN BUTTER, TOSS IN SUGAR AND MIX, REMOVE TO COOL
- - COMBINE LETTUCE, NUTS, AND GOATS CHEESE
- DRESSING
- - MIX ALL INGREDIENTS IN A JAR AND SHAKE UNTIL WELL COMBINED
- - POUR OVER LETTUCE AND TOSS TOGETHER GENTLY
- - SERVE IMMEDIATELY
Notes
- SUBSTITUTE ANY CRUMBLY CHEESE, LIKE FETA
- DO NOT LET THE SALAD SIT DRESSED FOR LONG AS IT WILL GET SOGGY
