IF EGGS START STICKING, REMOVE FROM HEAT AND CONTINUE WHISKING, ADD BACK TO HEAT ONCE MORE COMBINED

Ingredients
- - 4 EGGS
- - 2 TABLESPOONS BUTTER, UNSALTED
- - CAYENNE PEPPER
- - FRESH CRACKED PEPPER
- - SEA SALT
- - CHIVES, FREEZE DRIED
Instructions
- WHISK EGGS WITH A FORK IN A SMALL BOWL
- POUR INTO A SMALL SAUCE PAN AND COMBINE WITH 1 1/2 TABLESPOONS BUTTER
- TOP WITH CAYENNE PEPPER & SEA SALT
- HEAT TO LOW AND START WHISKING SLOWLY WHILE COOKING
- CONTINUE SLOWLY WHISKING EGGS UNTIL THEY START FLUFFING, 3-4 MINUTES (MAKE SURE YOU'RE NOT WHISKING TOO FAST)
- REMOVE FROM HEAT AND ADD 1/2 TABLESPOON BUTTER
- KEEP WHISKING GENTLY UNTIL BUTTER IS MELTED
- TOP WITH A LITTLE MORE SALT, FRESH PEPPER, AND CHIVES
- SERVE ON TOAST
