SIMPLE TACO SOUP
I have this love/hate relationship with soup, this one today: SIMPLE TACO SOUP is all about some love.
I’ve never been one to order soup, make soup, or be obsessed with soup but this soup right here, it’s a different kind.
This Simple Taco Soup is literally that. It’s simple and made in the Slow Cooker. (Our specific one is linked). Can I get a big YES!
Easy, literally a short list of ingredients, but it is oh so flavorful and tasty.
We might be slightly obsessed over here.
Creamy, a little heat from the hot sausage, and some plump juicy tomatoes.

This list is all combined in a crock pot and cooked on low all day long:
- ground beef
- hot ground sausage
- taco seasoning
- fire roasted tomatoes
- chicken broth
- cream cheese
- cheddar
Fall is calling our name with this soup and we’re all about it.

SIMPLE TACO SOUP
Notes
ADDING CHEDDAR TO THE TACO SOUP IS OPTIONAL, WE PREFER THE EXTRA SHARP CHEDDAR FLAVOR IT GIVES BUT FEEL FREE TO OMIT FOR LESS CHEESY-NESS.
Ingredients
- 1/4 CUP SWEET YELLOW ONION, CHOPPED
- 1 TABLESPOON BUTTER
- 1 TEASPOON GARLIC, MINCED
- 1/2 LB GROUND BEEF
- 1/2 LB GROUND SAUSAGE
- 1 8 OUNCE CREAM CHEESE, 1/3 LESS FAT
- 1 10 OUNCE CAN ROTEL
- 1 TABLESPOON TACO SEASONING
- 3 CUPS CHICKEN BROTH
- 1 TABLESPOON CILANTRO + MORE SERVING
- 1/4 CUP CHEDDAR CHEESE, SHREDDED + MORE FOR SERVING
Instructions
- SLOW COOKER:
- MELT BUTTER IN A LARGE SAUCEPAN, ADD IN CHOPPED ONION AND COOK UNTIL SOFT AND TRANSLUCENT
- TOSS IN GARLIC UNTIL FRAGRANT, ABOUT 30 SECONDS
- ADD GROUND BEEF AND GROUND SAUSAGE AND COOK UNTIL BROWNED
- REMOVE AS MUCH GREASE AS POSSIBLE
- COMBINE MEAT IN A SLOW COOKER WITH ROTEL AND TACO SEASONING
- ONCE MIXED, COVER WITH CHICKEN BROTH AND PLACE CREAM CHEESE ON TOP
- COOK HIGH FOR FOUR HOURS OR LOW FOR EIGHT HOURS
- MIX TOGETHER AND ADD IN CHEDDAR CHEESE AND CILANTRO
- GARNISH WITH MORE CILANTRO AND CHEESE
- INSTANT POT:
- TURN INSTANT POT ONTO “SAUTE” FUNCTION ON THE MEDIUM SETTING
- MELT BUTTER AND ADD IN CHOPPED ONION, COOK UNTIL SOFT AND TRANSLUCENT, ABOUT 3-5 MINUTES
- TOSS IN GARLIC UNTIL FRAGRANT, MIXING FOR ABOUT 30 SECONDS
- ADD GROUND BEEF AND GROUND SAUSAGE, COOK UNTIL JUST SLIGHTLY BROWNED
- REMOVE AS MUCH GREASE AS POSSIBLE
- ADD ROTEL AND TACO SEASONING AND MIX
- COVER WITH CHICKEN BROTH AND MIX
- TURN OFF INSTANT POT AND CLICK “SOUP”, SET TIMER TO 7 MINUTES IF NOT ALREADY
- MAKE SURE VENT HANDLE IS SEALED TOWARDS THE BACK LEFT
- CLOSE LID UNTIL IT BEEPS, LET COOK
- ONCE TIMER IS FINISHED LET SOUP NATURAL RELEASE FOR 10 MINUTES, TIMER SHOULD SAY 10 MINUTES ON INSTANT POT
- ONCE 10 MINUTES IS UP, USE THE BACK END OF A WOODEN SPOON TO MANUAL/QUICK RELEASE BY PULLING VENT HANDLE TOWARDS YOU (BE CAREFUL NOT TO GET NEAR THE STEAM)
- MELT CREAM CHEESE IN A MICROWAVEABLE SAFE BOWL FOR 30 SECONDS, MIX, REHEAT FOR 30 SECONDS
- USING 1/2 CUP BROTH FROM THE INSTANT POT, POUR INTO CREAM CHEESE AND MIX SLOWLY UNTIL COMBINED AND CREAMY
- ADD CREAM CHEESE MIXTURE BACK INTO INSTANT POT AND MIX SLOWLY
- ADD IN SHREDDED CHEDDAR AND MIX
- SERVE WITH CILANTRO & MORE CHEDDAR
