SHRIMP WITH FRIED RICE, RED PEPPERS & MUSHROOMS

Today was my first day at work after GRADUATION! I felt like I a real professional! I had to celebrate with a yummy meal!

I had a delicious shrimp meal last full of mango, pineapple chille sauce, and tacos. But tonight I stirred up some left over shrimp and created a meal with just a few on hand ingredients.

ingredients:
shrimp (precooked)
butter
rice
red pepper
mushrooms
soy sauce
lemon juice
spray & cook
salt & pepper

instructions:
1. cook one cup of rice according to directions in plain water
2. while rice is cooking chop mushrooms and red pepper into bite size pieces
3. spray a pan with spray & cook and heat to medium, add mushrooms and red peppers
4. sautee with soy sauce and add salt & pepper
5. after rice is cooked, add to pepper and mushrooms in the pan
6. add lemon juice, and a little more soy sauce
7. while rice is cooking use another pan to heat shrimp, add lemon juice and a small pat of butter
8. once shrimp is heated and rice is combined and browning transfer to a bowl!
9. add yum yum sauce if desired!

This is actually super fast so don’t expect to be in the kitchen for a long time! That’s my kind of meal.
