ROASTED GRAPE TOMATOES WITH GOATS CHEESE ON BAGUETTES
Let me introduce you to your next appetizer.
I haven’t met a single person who doesn’t enjoy this dish, AU included peeps. And it is mainly tomatoes (yes!).
It’s this delicious masterpiece of slow roasted grape tomatoes that have popped open from the constant heat and olive oil has created a delectable sauce with the tomatoes insides. It is truly a one of a kind sensation of overpowering but mild tastefulness.
Like all my recipes, this one is entirely too easy it’s scary.
Let me break it down for you: grape tomatoes, garlic, oregano, coarse salt, and some olive oil. Holy moly, that’s almost no ingredients to make a spectacular dish.
Oh and just add some crusty bread and soft spreadable goats cheese to the mix and you just showed up in heaven. Did I mention that the tomatoes are hot out of the oven when you devour them?
I can’t think of anything better than some creamy light goats cheese and bread with sweet tomatoes. You can sprinkle a bit of sugar in the raw to reduce the tartness of the tomatoes but if you love those flavors just leave the sugar out. I love the mixture of sweet and salty in anything. I like to say “it’s all about texture”, and with texture you need sweet and salty pieces in almost everything you eat. It is like the yin and yang of food.
If you would rather use baby tomatoes instead of grape tomatoes go ahead, do you even know the difference? I believe the grape tomatoes are bigger than the baby (that would make sense right?). But I have to admit I don’t know the real difference between the two.
These are sure to be a crowd pleaser, just look how cute they are.
