RAW NUT CHOCOLATE BARS
Let me just give you a little background on these RAW NUT CHOCOLATE BARS real quick.
About a month and a half ago I started eating healthier and watching my portions, desserts, etc. After some hard work I lost about 10 pounds and was feeling quite proud. Next thing I knew I was eating and drinking rose in Belgium for a week. AU and I then spent two weeks in South Africa enjoying some fabulous food and more rose. We arrived home and what do you know… those 10 pounds had creeped up on me AGAIN.
Cue these healthier Raw Nut Chocolate Bars to satisfy the sweet tooth.
These bars are absolutely fabulous and were found on Pinch Of Yum’s blog.
Raw Nut Chocolate Bars are made with a simple list of few ingredients.
A crumble is made with raw pecan nuts, rolled oats, pitted dates, and coconut oil.
Layered in the middle is a minimal chocolate sauce made with coconut oil, agave nectar, and cocoa powder.
Sea salt is sprinkled on top to complete the salty sweet experience.
It’s a simple recipe but so perfectly sweet without being overbearing.
You get all the feel goods eating these without all the fat and potential pound gainers with most desserts.
Personally we like that these are super simple and easy to make, no baking required, just quick freezing to set the crumble layer and smooth chocolate.
Once they’re out the oven there’s no guilt in overindulging or overeating because these babies are clean and healthier than most.

SUBSTITUTE HONEY OR MAPLE SYRUP FOR AGAVE NECTAR
Ingredients
- CRUMBLE:
- 1 1/2 CUPS PECAN HALVES
- 1 1/2 CUPS ROLLED OATS
- 8 MEJDOOL PITTED DATES
- 1/2 CUP COCONUT OIL, MELTED
- SEA SALT
- CHOCOLATE:
- 1/2 CUP COCOA POWDER
- 1/4 CUP AGAVE NECTAR
- 1/4 CUP COCONUT OIL, MELTED
Instructions
- COMBINE PECANS, OATS, DATES COCONUT OIL AND A PINCH OF SEA SALT IN A BLENDER OR FOOD PROCESSOR
- BLEND UNTIL A FINE CRUMBLE FORMS
- LINE A 9X5” LOAF PAN WITH PARCHMENT PAPER AND FILL WITH CRUMBLE ALL EXCEPT 3/4 CUP
- PUSH DOWN WITH FINGERS TO COMPACT
- ADD COCOA POWDER, AGAVE NECTAR AND COCONUT OIL IN A BOWL AND MIX UNTIL SMOOTH
- POUR ON TOP OF CRUMBLE CRUST
- SPRINKLE 3/4 CUP RESERVED CRUMBLE ON TOP
- GARNISH WITH SEA SALT
- FREEZE FOR 2 HOURS
- CUT INTO 12 PIECES AND SERVE
