SPICY QUESO WITH CRUMBLED SAUSAGE (SLOW COOKER)
On Saturday night AU and I went out for Mexican date night. I feel like every night is date night now that AU has moved back home, he might not though. But I even wore eyeliner. I dressed up in my fur vest, my heeled booties and we headed out to Senor Bravo in downtown Winston-Salem. It had a cool little vibe and the food was fantastic. We are always game to try new places and move them up on our list.
This place won us over with the queso. Hand downs, it had chorizo in it! Oh I could go for it right now. Get excited with me by checking out the picture of it below!
So after the dinner I was thinking about that queso and I wanted to try replicate its flavors with some of my own. I found a recipe on pinterest recently that was a queso (without Velveeta) in the slow cooker. Let me introduce you to my kicked up queso with crumbled hot sausage.
I hate velveeta, you too? Good. So this has white american cheddar in it, I found it at the deli counter and asked for it to be cut in a chunk, then I cut it into cubes myself.
The one thing I would change about this is the heat of the jalapeno’s and chilies.I am going to update the recipe with the hotter of the two and you can decide to downgrade your spicy green additives or keep them as I post it. I always enjoy some spiciness in my queso, it gives it a lovely flavor kick.
Another great thing about this recipe, is that you can choose to use the sausage or not. AU and I love meat and the flavor it has with cheese. If you’re not feeling up to it, leave it out. I used Jimmy Dean’s hot crumbled sausage. Next time I would like to find a crumbled chorizo and mix it in there instead. The hot sausage was great because it had a spiciness to it but the chorizo has that smoky flavor that you just can’t find anywhere else.
Let’s move on to the fresh greens: cilantro. Holy moly I love some cilantro and by some I mean a lot of it. AND THIS has cilantro in it. I put some in halfway while the cheese was melting, and as you will see I added a chopped handful on top.
You either love it or you don’t. I have heard some say it tastes like soap, that is false (my taste buds disagree).
SPICY QUESO WITH CRUMBLED HOT SAUSAGE
Ingredients
- 8 OUNCES CREAM CHEESE CUBED
- 1 LB WHITE AMERICAN CHEESE CUBED, FIND IN DELI!
- 1 TABLESPOON BUTTER
- 4 OUNCES CANNED GREEN CHILI'S
- 1 TABLESPOON JALAPENO MINCED FINELY
- 4 TABLESPOONS MILK
- 3 TABLESPOONS WATER
- 2 TABLESPOONS CHOPPED CILANTRO
- 8 OUNCES HOT SAUSAGE
- 1/2 TEASPOON CUMIN
- S&P TO TASTE
Instructions
- OMBINE CREAM CHEESE, WHITE AMERICAN CHEESE, BUTTER, CHILES, AND JALAPENO'S IN A SLOW COOKER ON HIGH FOR 30 MINUTES.
- STIR WELL THEN ADD MILK AND WATER 1 TABLESPOON AT A TIME UNTIL THE MIXTURE IS SMOOTH.
- CONTINUE COOKING FOR ANOTHER 15-20 MINUTES UNTIL ALL THE CHEESE IS MELTED.
- WHILE COOKING FOR THE SECOND AMOUNT OF TIME, COOK AND CRUMBLE SAUSAGE OVER MEDIUM HEAT. ONCE BROWNED ADD IN CUMIN.
- TRANSFER MELTED QUESO TO A SMALL BOWL AND TOP WITH CRUMBLED SAUSAGE AND CHOPPED CILANTRO!
- SERVE WITH CHIPS, ON TACOS OR QUESADILLAS.

AU and I served this with homemade carnitas, which let me fill you in reaaaaal quick, were the bomb!
