PUMPKIN CHOCOLATE CHIPS MUFFINS

What’s up with my muffin craze lately? Other than the fact that they are awesome for quick breakfasts, afternoon tea snacks, or warmed up with ice-cream for dessert?!

These are just a few reasons why you have to put chocolate in them!

I would like to tell you that I am not a pumpkin lover, not by any means. I don’t like to eat it as a side vegetable and I definitely do not like pumpkin pie. At all. But when I tried my sister’s “pumpkin” bread with cream cheese and icing drizzle, I guess I changed my mind about pumpkin. It was that good AND it didn’t taste anything like pumpkin.

Then I found a recipe on pinterest for pumpkin muffins and I immediately pinned it for my future. Then I decided to make these muffins this morning. And BOOM they rocked.

This recipe requires a few different steps, as well as mixing the dry ingredients first (but that’s really no biggy). First you must mix the oats and milk together and let them sit (don’t forget this important step).

ingredients:

dry:

2 cups rolled oats ( I used regular oats)
1 cup flour
1/2 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
chocolate chips (as many as you want)
pecan nuts (as many as you want)

liquid:

1 teaspoon vanilla extract
1 1/2 cups milk (I used skim milk and half & half)
2 eggs
1/2 cup honey

directions:

1. Preheat oven to 400, then mix the oats and milks of your choice in a medium sized bowl
2. Set aside the mixture for 10 minutes while you mix everything else
3. In a large bowl mix the two flours, baking powder, salt, and cinnamon together
4. Make a hole in the middle and push the ingredients to the sides
5. Crack eggs in hole, add vanilla, and honey, mix together
6. Dont’ over mix, lastly add in nuts and chocolate (whatever you choose, this could literally be anything)
7. Set out cupcake or muffin liners (I got 23 cupcake liners full with mixture)
8. Bake for 18 minutes then let cool (poke with a fork or metal stick to check if they are cooked inside)

They are very pretty and yummy. I like to eat mine warm out of the oven. Sometimes it is even great to heat them in the micro for a few seconds.

Let me know if there are any questions. These are very simple and dont take long at all. Just make sure to mix the ingredients separately as specified and to follow the directions. A lot of the time when directions specify to mix dry ingredients and liquid ingredients in different bowls it is for a good reason. I think to myself “that is so not necessary” and then I mix them all together at once. But this time I listened and it was worth it. Nothing worse than not following the instructions and then having a flopped end product. Sucky and no fun. All in all follow the recipe this time :)
