PEANUT BUTTER CHOCOLATE POPCORN BARS

Popcorn is my life. I eat it almost every single day.

My go to is Boom Chicka Pop and I can eat the entire huge bag from Costco in one sitting. Its like my crack.

And don’t even get me started on the homemade popcorn my love makes for me on the regular, with salt & butter please.

I decided it was time for something sweet with popcorn as fall is approaching quickly.

These Peanut Butter Chocolate Popcorn Bars are the perfect salty sweet treat.

These bars come together very quickly and have minimal ingredients:

popcorn, DUH!
peanut butter, DUH again
butter
marshmallows
salt
chocolate chips

That’s it. You throw it all in a big pot, let it melt, and mix really really really hard, push it into a dish and cut it into squares.

These bars look super caramelly in the photographs but there was no caramel used in the making of this dessert. These Peanut Butter Chocolate Popcorn Bars are caramel free!

BUT

The melted ooey gooey marshmallows mix with the peanut butter and they totally create a fake caramel in itself. It’s awesome.

I love that these bars are easy but if you have braces, I would pass. Sorry but the sticky marshmallow that’s pretending to be a caramel kinda gets stuck in your teeth (only a little bit) and when you bite into these bars its easier to pull then to try separate the popcorn itself.

PEANUT BUTTER CHOCOLATE POPCORN BARS

Ingredients
  • 10 cups plain popped popcorn
  • 1 tablespoon unsalted butter
  • 1/2 cup creamy peanut butter
  • 10 ounces marshmallows
  • 1/2 cup semi-sweet chocolate chips
Instructions
  1. First pop the popcorn and measure out 10 cups. Set aside.
  2. Melt the butter in a huge pot and add in the peanut butter. Mix together and add in the marshmallows. Let melt and keep mixing until combined.
  3. Remove from the heat and toss in the popcorn and chocolate chips.Transfer to a greased 9″x13″ pan. Press fingers into the popcorn to level it out.
  4. Refrigerate 10 minutes and cut into squares.
 
Notes
I used fresh popped popcorn but microwave popcorn or bagged plain popcorn is just as good.
