PEACH TOMATO SALSA
Yesterday I ventured to the farmers market with my sister, mom, and sisters fiancé! We were kind of in and out because it was PACKED! So many people were there and so many farmers and vendors. I even got fresh ears of corn!
I was able to grab some fresh peaches, jalapeños, and tomatoes from three different farms. The chopped juicy goodness above, um yum! (New fav saying).
I am not sure if I’m the only one who feels this way but how are you supposed to choose between every single farm table that is set up? Who has the best peaches or tomatoes for that matter. Do they really differ that much? In my opinion I’m so overwhelmed with every station that I don’t know where to turn and don’t want to make any eye contact! Is that bad? Haha.
Anyways my point of this was to share this awesome healthy recipe! And its paleo!!
My family loves fruit salsas with tomatoes. The fresh peaches mixed with tomatoes compliment the sweet flavors and just taste amazing. And this recipe is easy but takes a lot of prep, mainly chopping.
PEACH TOMATO SALSA
Ingredients
- 2 ripe tomatoes
- 2 sweet peaches
- 1 small jalapeno
- 1/4 red onion
- juice of half a lime
- S&P
Instructions
- Chop tomatoes and peaches into chunks. Dice the jalapeno and red onion.
- Combine tomatoes, peaches, jalapeno, red onion in a medium sized bowl. Add lime juice and season with salt & pepper.
- Mix gently to combine all ingredients.
- Serve with chips, over shrimp tacos, or use it as a garnish on grilled chicken or steaks.
I served this with chips but I’m sure there’s a paleo substitute. I think it would be fab on grilled chicken or steak if your interested. Especially while summer is still here and it so hot!
So enjoy please. And serve this as any appetizer, salad, or meat enhancer!
I’d love to try this on pork tenderloin! Pork tenderloin always pairs well with sweet juicy fruit salsa.
