ORANGE CHICKEN WITH HOMEMADE LO MEIN NOODLES
Welcome to one of my very first Asian-ish blog posts. Sesame chicken, orange chicken, lo mein, general tso’s… Those always seem so hard to replicate and so difficult to make for dinner. So in my life those recipes are skipped. But not this time. I took on making my very own lo mein and my own orange chicken.
And wake up call!! It was all fab.
The lo mean was great & simple. It starts with regular spaghetti noodles (this May not be 100% accurate for real Chinese food but…) and some soy sauce.
The orange chicken requires quite a few ingredients but as always it’s not that hard. Unfortunately when mixing in my cornstarch the box dumped into my pan making the sauce a little gelatinous. But ya know it tasted just as wonderful.
Friendly tip: follow the measurements on this one (or just the cornstarch ;))
ingredients (orange chicken):
2 lb chicken, cut into bite size pieces
S & P
Olive oil
1 teaspoon minced garlic
1/2 cup freshly squeezed oj
1/2 cup honey
1/3 cup soy sauce (less sodium)
1/4 cup white vinegar
3 tablespoons cornstarch
1/2 teaspoon ginger
Zest of the orange
Red pepper flakes (if wanted for heat)
Ingredients (lo mein):
1 tablespoon garlic
1 box spaghetti
1/4 cup soy sauce
1 teaspoon sesame oil
1 tablespoon green onions, chopped
Red pepper flakes for sprinkling
Sesame seeds for sprinkling
Directions (orange chicken):
1. Sprinkle cut chicken with S & P, mix all other ingredients in a small bowl
2. Heat oil in a large pan, add chicken and cook over medium heat
3. Brown chicken on both sides to add a slightly crispy texture (this can be achieved by leaving the chicken to cook longer than you think, therefore creating a nice brown crisp)
5. Pour sauce over chicken and continue to cook in pan
6. Let the sauce come to a slight boil, keep mixing
7. Top with sesame seeds & and plate on top of noodles
Directions (lo mein):
1. Cook pasta until al dente
2. Sautée garlic & green onions in sesame oil
3. Toss in cooked noodles
4. Cover in soy sauce and mix together
5. Top with sprinkled red pepper flakes & sesame seeds
6. Plate under chicken
While cooking the chicken and lo mein I quickly whipped up some healthy broccoli. I literally microwaved it with a little water to keep it crunchy. I do NOT like my broccoli mushy and soft. Yucky. Then I topped the broccoli onto my chicken (getting those veggies in).
Try this meal with some chopsticks. Give it a go.
I have this new thing where anything Asian, Japanese, Thai, or Indian will not be eaten without chopsticks.
