Have you ever had Barbacoa at Chipotle!? Because now you can have it in your own home with this Instant Pot Barbacoa (Chipotle Copycat)!

I love a good copycat recipe.

This Chipotle Copycat Guacamole and this Copycat PF Chang’s Mongolian Beef are a few of my go to recipes.

Those recipes are just SO GOOD all made in the comfort of your own home.

I can’t lie that I’m not a little bit addicted to Chipotle. It’s just so damn good and it feels *healthier* than eating out elsewhere or making bad food choices. And can we all admit that their guacamole is just unbeatable. I swear by the copycat guac recipe above.

Guac is always extra and that’s okay with me!

And AU loooovvess their barbacoa meat. The flavor, the juicyness, the texture, all of it is so amazing.
While I’m more of a chicken kind of gal.

BUT every once in a while I’m all about their barbacoa in AU’s burrito (haha!). And so we made it at home, and then made it again and then I decided I NEEDED to share it with you because it’s that good.

And it’s even better that it’s all made in the Instant Pot. It’s seared and then cooked all in one pot. Mixed with a fresh blend of chipotle pepper spicy blended yuminess. Then shredded and placed in any form of food you want.

Burritos, burrito bowls, quesadillas, salads, tacos, nachos, with pasta, tostadas, rice cakes, in lettuce wraps.

What did I miss?!

Love how juicy it is and all the flavor in there.
It’s so tender, full of so many unique flavors because it’s basically slow cooked in record timing.

PRO TIP: Make the guac recipe above and pair it with this Instant Pot Barbacoa.

This is our Instant Pot and we love it and use it almost weekly.
