PEPPERONI, SPINACH, FETA & PINE NUT PIZZA
What a title! I had to tell you what was up with the pizza, cause it’s a whole lot of yummy goodness!
One thing I truly love, thanks to my Mom who would have “homemade pizza nights” frequently throughout my childhood, is obviously homemade pizza.
There are so many reasons why I love a well made home baked pizza. To start with the amount of healthy improvements are enough for me. But more importantly the freedom of toppings and cheese is what I really dig.
My other favorite thing about pizza in the kitchen is that the base DOES NOT always have to be a pizza base. Horror of horrors! But seriously naan bread and pitas are fab substitutions. In this recipe I used naan bread (I love naan bread, oh my goodness I do) and it baked nice and crispy on the bottom and still retained structure and some softness inside the crust. I really can’t tell you how much you have to make your own pizzas with naan bread.
Here’s just another reason why I love homemade pizzas; it is reaaaallly easy to portion control. One naan/pita pizza base each and you’re done. And it really fills you up so you don’t just sit there and scoff down multiple pieces of pizza. I’m talking to all of you out there, and myself!
My last reason why I love homemade pizza is the way you can control the amount of olive oil, marinara, toppings, and cheese on your individual pizza. This way you don’t ingest an entire block of cheese that was shredded and melted at Papa Johns (guilty that is my fav pizza place) without even knowing it!
Lets give these pizzas a go why don’t we?!
I have provided some layering pictures for you of me building my pizza, if you are a homemade pizza newbie. But trust me when you find out how easy it actually is, you may not be getting pizza as often as you normally do. Go ahead and cut down on that grease!
Okay I lied, one last thing that’s great about homemade pizzas; you can make as many versions as you want and as many toppings as you want and you don’t have to pay extra for each!
For our homemade pizza night I made two versions of pizza; the one in the title and a pepperoni with mozzarella and feta for AU, of course. Both were equally as delicious, you’ll see a reason why at the bottom of the post!
If you would rather use mozzarella instead of feta AND mozzarella go ahead, it will taste just as good. Another fantastic substitution for feta on this pizza would be goats cheese. That stuff melts like a champ.
The ingredients I used were what I had in the kitchen & pantry. Luckily I don’t always have to go out and buy things for pizza. Use what you already have. Mix and match nuts, onion types, veggies, meats, and of course cheeses. Whatever you create will taste just how you like it, and that my friends is good.
The pizzas I make are easy, like I already said, and this comes from my mommy! You start with olive oil and slather a thin layer all over the base. Top it with some minced garlic and spread it all around. Then finish it off with some marinara, I use what is in my fridge instead of buying actual pizza sauce. Then you’re ready for toppings!
The recipe and instructions are slightly vague. I did them this way on purpose, I want you to decide how much marinara and pepperoni YOU want! I can’t tell you that. It really depends on what you are feeling and what toppings you want!

Just don’t over sauce your “”pizza crust”. A good way to remember this is don’t let the sauce start to tip over the sides and make sure you can see barely see some of the crust through the sauce. This ensures that your pizza wont be too saucy and then the toppings will actually stay on the pizza and not slide off!
