HOMEMADE CHOCOLATE GRANOLA

Let me just tell you about my granola journey lately and this Homemade Chocolate Granola.

I first had homemade granola that my sister made for me last weekend. It was magical to be honest. It was the perfect amount of sweetness laced with crunchy crunchy oats that had been glazed in the oven. I consumed half of the jar in one day and then the other half of the jar over a period of 3 days (it was hard to make it last that long).

The granola my big sister, CL, brought me was vanilla almond coconut granola and it is my favorite granola I have ever had. On one particular day I literally ingested the granola w/ plain greek yogurt for breakfast, I then moved onto multiple spoonfuls of granola before dinner, and then I thought what the hell I’ll try it over some chocolate ice cream for dessert. That was the best granola day of my life.

I then tried my bosses chocolate granola that she found on Pinch of Yum the Monday afterwards and I realized I have been missing out on this granola train all my life. Who actually knew making your own granola was so easy, because I was clueless.

I always thought it was this lengthy hardcore process with massive amounts of time and energy. It only mad sense that the ridiculous price tag of oats I see in the grocery store were the reason.

Friends, making granola is about the easiest breakfast item there is to make, I kid you not.

I invite you to try this chocolate granola that I decided to remake and if you don’t listen to me, you are losing out. It’s harsh but so true.

This particular granola (right here) is the bad daddy of all granola’s.

First of all, it’s chocolate granola. It had me at choc (that’s what I like to call my chocolates).

Secondly, it has chocolate chips in it.

And thirdly it is made with melted coconut oil. I swoon over coconut oil. I love the delicate flavor and the fact that it’s not overpowering when used in food and it’s much healthier than almost all oils (except maybe sunflower oil/grapeseed oil).

I just could not pass up trying this recipe for myself. I even thought AU might give it a try. He’s been known to indulge in one chocolate thing once a month.

So I thought lets do this granola thing.

And today I’m sharing with you just how easy, simple, and scrumptious this recipe is.

Getting back to how easy making your own granola is…

You literally measure out all of your ingredients, mix them in a large bowl, pour them onto a baking sheet and bake them low and slow till they become caramelized chocolate chunks of heaven.

Oh and then you pour chocolate chips & coarse sea salt over the entire batch and watch them melt together in front of your face.

It took all of 2 seconds for my big spoon to come out and shovel the granola into my mouth.

I’ll give you some more details on how to actually make this recipe.

CHOCOLATE GRANOLA

Ingredients

  • 3 cups old fashioned rolled oats
  • 1 1/4 cups sliced almonds
  • 3/4 cup coconut I used sweetened
  • 1/2 cup cocoa powder
  • 1 teaspoon salt
  • 1/2 cup sugar in the raw
  • 2/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla essence
  • 1 cup semi-sweet chocolate chips
  • coarse sea salt for topping

Instructions

  • Preheat the oven to 250 degrees.
  • Measure out all dry ingredients from the oats to the sugar, and combine in a large mixing bowl. Mix together and set aside.
  • Melt coconut oil and measure out all wet ingredients from coconut oil to vanilla essence.
  • Mix the wet ingredients into the dry and mix together completely. Pour out onto two baking sheets lined with parchment paper. Bake for 50 minutes. Mix granola after 25 minutes.
  • Once the 50 minutes are up cover granola with chocolate chips and bake for 10 minutes. Remove from the oven and sprinkle with the coarse sea salt.
  • Leave granola out for 2 hours then store in a sealed container, I used 2 large mason jars and one small one.
