GRILLED PINEAPPLE SALSA

I think grills are like magic. They create super flavorful things like this
Grilled Pineapple Salsa.
The char and blackness that grilling gives sweet ripe
fruits and vegetables is literally the best thing ever.
I’ve kind of been obsessed with saying “best thing ever” a lot lately but I just can’t lie. So many things in my life lately have just been the best thing ever.
Getting married, that’s a given.
Honeymooning for an entire week in Mexico, duh.
The fact that it’s the freaking weekend, you too right?
Having a husband, which is awesome!
Baking an alcoholic rum cake today and eating it while having english breakfast tea (just wait for that boo-tiful boozy blog post ;)).
And then this fantastic recipe for an easy tasty
Grilled Pineapple Salsa that I’m sharing with you.
There are three things that I need to share with you about
making a perfect homemade salsa…
1: don’t use too many ingredients that you literally
can’t taste anything that is in the salsa
2: combining fruits AND vegetables is the key to a flavorful masterpiece
3: don’t EVER ever EVER skip the cilantro
This salsa has everything you could ever want in a salsa (#besthingever)
haha jk but really. It has pineapple (duhhhhh),
red pepper, jalapeno, red onion, spices, and cilantro.
Almost everything is grilled in this recipe except for the salsa additions: cilantro (how would you even grill that?), lime juice, cumin, and ginger.
The grilled items even have char marks, I mean really? So cool.
I think I’m getting way too excited about this salsa,
#amiright? Also, side note, hashtags are awesome.
- 1/2 pineapple, ripe- trimmed & sliced
- 1 red bell pepper, small- de-seeded and quartered
- 1/2 red onion, small- cut in half
- 1 jalapeno- large
- 1/2 cup cilantro
- 1 tablespoon fresh cilantro
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cumin
- S&P
- Olive oil for grilling
- Heat the grill, as it’s heating grease it with paper towel and oil.
- Skewer red onion and drizzle onion, jalapeno, and red pepper with oil.
- Grill red onion, jalapeno, red pepper and pineapple until charred. Make sure to turn before burning.
- Remove ingredients from grill and let cool slightly.
- Chop pineapple, jalapeno, red onion, and red pepper for the salsa.
- Toss chopped ingredients with cilantro, ginger, cumin, and S&P.
- Let salsa chill and serve with chips, on tacos, or on grilled chicken.
It’s still not too cold to grill yet, just do it in the sun.
