GRILLED CAPRESE SANDWICHES
This is the sandwich of the summer:
grilled caprese sandwiches my friends, that is what I’m talking about today.
I cannot think of a more perfect combination that could go between two thick slices of freshly baked white bread:
juicy red tomatoes
homegrown basil
creamy mozzarella
& balsamic vinaigrette
Can you think of anything better that you could smoosh between two pieces of bread?
Me neither.
I have made these caprese sandwiches at least three times with the warmer weather this year.
They are extremely easy and fast to prepare and make. And if you buy the mozzarella pre-sliced that’s one less step for you!
Caprese sandwiches are such a favorite of mine because they are not the most un healthy thing in the world, there’s tomato on there!
Green basil is also included. I like to cover my sandwiches in ripped basil (as you can see).
I try to stay away from gluten on most days but these sandwiches are something I cannot get enough of lately. I quickly grab the ingredients, slice the tomatoes and get to work.
I like to use an electric frying pan or large sautee pan to grill the sandwiches to make them into grown up grilled cheeses. That’s really what these are.
When I bite into a crunchy sandwich with melted cheese I sometimes think I’m in heaven.
That is my reaction with these sandwiches:
the sandwiches are grilled at a medium low heat to completely melt the mozzarella and not burn the bread.
GRILLED CAPRESE SANDWICHES
Ingredients
- 8 slices white Italian bread
- 2 ripe tomatoes off the vine
- fresh basil leaves
- 12 ounces fresh sliced mozzarella
- spray and cook
- fresh pepper
- balsamic vinaigrette- Good Seasons Italian seasoning packet is my go to.
Instructions
- Prepare tomatoes and mozzarella. Slice tomatoes thinly and slice mozzarella if it is not pre-sliced. Tear or cut basil into ribbons.
- Heat a large pan or electric frying pan on medium high heat. Once hot, cover with spray and cook. Assemble sandwiches while the pan is heating.
- Layer the bottom half piece of bread with about 3 ounces of sliced mozzarella first, top with sliced tomatoes, basil, and drizzle with balsamic vinaigrette. Lastly cover with fresh ground pepper. Place sandwiches mozzarella side down and grill 3 minutes.
- Turn heat to medium and spray the tops of the sandwich. Flip over and grill for 5 minutes until golden brown. Flip back to the first side and grill for 1-2 minutes until the cheese is completely melted and both sides are crispy and golden brown.
- Serve with extra balsamic vinaigrette.
I’d recommend you dip these into a little extra balsamic vinaigrette, there’s just no other way.
