GF BANANA OAT CHOCOLATE CHIP PECAN MUFFINS
The recipe I am going to share with you today involves banana and health in these GF Banana Oat Chocolate Chip Pecan Muffins.
What a mouthful.
These are some of the best muffins I have ever had. Did I tell you that they’re healthy AND gluten free? And most importantly absolutely delicious.
I’ve told you before that I REALLY don’t like bananas, it happened to be during a recipe blog post about bananas… it was this Banana Pudding recipe. But that wasn’t just any Banana Pudding, it was made with condensed milk and it was so creamy and sweet. Those bananas (the 6 slices that I used) were delicious and I thoroughly enjoyed the flavor in the pudding.
I’ve also shared another banana recipe with you, Baked Banana Bread from my Mom and it’s also just as wonderful.
But all of these recipes have something in common… banana is NOT the main ingredient but a part of something greater!
And that I love.
These GF Banana Oat Chocolate Chip Muffins are very simple without refined sugar. Honey is used instead of sugar with vanilla essence and for more fun, chocolate chips and pecans are added.
Oat flour is used instead of white baking flour by just blending the oats into a powder. Literally could not be any easier!
Nonfat plain greek yogurt is also added to the recipe to give extra protein and some healthy probiotics.
I made these for meal prep breakfasts and snacks and plan to freeze a few for easy healthy food on the go. I’ve been meal prepping breakfast, snack 1, lunch, and snack 2 lately and I needed something different for breakfast!
My go to’s have been Maple Brown Sugar Instant Oatmeal, TJ Peach or Mango yogurt with TJ Pecan Granola and homemade smoothies. YUM!
This recipe is easy, fast, and literally so simple I can’t even believe it. Sometimes I associate muffin making to be time consuming and difficult but I made & baked this recipe in less than an hour. Yes I really did.
SIDE NOTE: Does anyone love the fake flavor of banana and dislike the real one like me? Because I am obsessed with Banana Laffy Taffy’s.
GF BANANA CHOCOLATE CHIP PECAN MUFFINS
Notes

Ingredients
- 2 OVERRIPE BANANAS (SLIGHTLY BLACKENED)
- 2 LARGE EGGS
- 1 1/2 CUPS ROLLED OATS
- 1 CUP PLAIN NONFAT GREEK YOGURT
- 1/2 CUP HONEY
- 1 TEASPOON VANILLA ESSENCE
- 2 TEASPOONS BAKING POWDER
- 1 TEASPOON BAKING SODA
OPTIONAL:
- 1/4 CUP SEMI-SWEET CHOCOLATE CHIPS
- 1/4 CUP CHOPPED PECANS
Instructions
- BLEND ROLLED OATS IN A FOOD PROCESSOR OR BLENDER FOR 10 SECONDS
- ADD REST OF THE INGREDIENTS, BLEND UNTIL SMOOTH (EXCEPT CHOCOLATE CHIPS AND PECANS)
- PREHEAT OVEN TO 350 DEGREES AND SPRAY CUPCAKE/MUFFIN PAN WITH COOKING SPRAY OR USE MUFFIN/CUPCAKE LINERS
- FOLD IN CHOCOLATE CHIPS OR PECANS (OR SPRINKLE ON TOP AFTER FILLING UP MUFFIN CUPS)
- POUR BATTER EVENLY INTO CUPCAKE PAN ABOUT 1/2 WAY TO 2/3 OF THE WAY UP (SHOULD MAKE ABOUT 12-16 MUFFINS)
- BAKE AT 350 FOR 15-18 MINUTES UNTIL A TOOTHPICK COMES OUT CLEAN (WITHOUT ANY RAW BATTER)
- LET COOL
- FREEZE IN ZIPLOC BAGS OR EAT ALL AT ONCE
Let me know if you have any questions or are curious about substitutions. You could throw anything and everything in these muffins including nuts, craisins, fruit, and coconut.
The options are endless! And if you want them plain without any toppings for a simpler muffin, you go for it.
