FRESH RASPBERRY LEMON CHEESECAKE
So this happened today, along with some powdered sugar wedding cookies (but you can see those another time).
There is something about a good cheesecake; a creamy, soft, delectable cheesecake. With fruit. Always with fruit, for that fresh updated taste that cools your taste buds and ends the creaminess on a smooth note without choking in your throat. Ya know what I’m saying?
Well these are a spin on that, cheesecake “bars” with fresh raspberries.
This works in three ways; a graham cracker base, duh, a cheesecake layer, of course, and the topping; raspberries and brown sugar crumble.
And this is one of those cheesecakes that you have to bake, because we all know I love the no bake cheesecakes, so suck it up kids and bake it!
You need a little time on your hands for this one because you have all those different steps I mentioned and then you have to bake it, cool it for an hour, and then refrigerate. But it’s really not that bad.
I am serving these at tea and they will pair perfectfly with some english breakfast. I tried to do a traditional tea with sammies and mini desserts. And this is where we meet up with those wedding cookies again.
