FRESH FRUIT PIZZA
It’s strawberry season so we made a FRESH FRUIT PIZZA!
It truly is a pizza; made with a sugar cookie base then layered with sweetened cream cheese. AU doesn’t like to call it a “pizza” but that’s what it is!
Sliced fresh fruit is placed on top as the “pizza” toppings and the cream cheese is obviously the “pizza” sauce.
In season fruit is best for this Fresh Fruit Pizza to let the real goodness shine.
Use any fruit you want; kiwi’s, mango’s, raspberries, blackberries, or even watermelon.
These strawberries were so pretty and super sweet!
Sugar cookie dough pieces are used to make the sugar cookie circle which means this dessert could not be easier.
Why waste time making a from scratch cookie dough when you can just use store bought and get out into the sunshine sooner?!
Unless you’re into that sort of thing, use this homemade Sugar Cookie Dough instead but half the recipe ingredients.
When baking the sugar cookie crust layer make sure it bakes until golden brown so that it stays crispy and crunchy and does not get soft.
Have fun with your fruit pattern, get creative!
You can even make it into an American flag and shape the cookie dough into a rectangle instead of a square.
The possibilities are truly endless.
FRESH FRUIT PIZZA

Ingredients
- 1 REFRIGERATED SUGAR COOKIE DOUGH SQUARES- SOFTENED SLIGHTLY
- 1 8 OUNCE CREAM CHEESE, 1/3 LESS FAT- SOFTENED
- 1 TEASPOON VANILLA ESSENCE
- 1/4 CUP WHITE SUGAR
- 2.5 CUPS FRESH FRUIT, SLICED
Instructions
- COVER A PIZZA STONE, ROUND CAST IRON SKILLET, OR PIZZA COOKING TRAY WITH PARCHMENT PAPER
- ONCE COOKIE DOUGH IS SOFTENED, PLACE ALL SQUARE PIECES ONTO PARCHMENT PAPER
- USING YOUR HANDS SMOOSH EACH PIECE TOGETHER AND START TO FORM A CIRCLE
- FLATTEN COOKIE DOUGH TO 1/4" THICK AND USING YOUR FINGERS CREATE THE ROUND SHAPE
- BAKE AT 375 DEGREES FOR 15-20 MINUTES UNTIL GOLDEN BROWN, KEEP YOUR EYE ON THE COOKIE DOUGH SO IT DOES NOT BURN
- ONCE BAKED, LET COOL
- TRANSFER COOKIE TO A ROUND WOODEN BOARD OR PLATE
- IN YOUR KITCHEN AID ADD SOFTENED CREAM CHEESE, VANILLA AND SUGAR AND BEAT ON MEDIUM SPEED WITH THE WHISK ATTACHMENT UNTIL SOFT AND COMBINED
- USING A SPATULA OR SPREADER COVER COOKIE WITH SWEETENED CREAM CHEESE
- TOP WITH FRESH SLICED FRUIT IN ANY PATTERN YOU WANT, GET CREATIVE!
- REFRIGERATE FOR ONE HOUR BEFORE SERVING
- USING A PIZZA SLICER OR CUTTER, CUT INTO 8 PIECES & SERVE
Therefore this is also the MOST perfect dessert for Fourth of July!
