FRESH FRUIT BAKED OATMEAL
This recipe comes from Pinterest, and my roomie actually found it first! So I copied her and finally made it today. It is the most delicious breakfast food that it could even pass for a dessert.
The sweetness of the berries are so refreshing and healthy. The ingredients are simple, minimal and, mainly healthy. The great thing is that it is a fulfilling food that you could honestly serve or eat for breakfast or even dessert!
This is another recipe where you need to separate the dry ingredients from the wet. But it’s simple instructions and will most definitely be an amazing turn out.
My recipe differs slightly from the original. I don’t like bananas (at all) so instead of using a banana I used extra berries. I will however provide the banana instructions if you prefer!
ingredients
dry:
2 cups oats, rolled or organic (whatever you like)
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
wet:
2 eggs, whisked
2 cups milk (I used a mixture of almond and coconut milk but any milk works!)
1/4 cup honey
1/4 cup maple syrup (I like the glass bottle kind, it’s reallllllly good)
2 teaspoons vanilla extract (or imitation)
4 tablespoons melted butter, cooled slightly
fruit:
1 banana, optional
2 or 3 cups of fruit (I used raspberries, strawberries, and blueberries)
instructions:
Mix all dry ingredients except for the fruit in a bowl. Preheat oven to 375. Set dry ingredients aside. Mix all wet ingredients in a separate bowl. Make sure you first melt the butter, then cool it slightly. And also whisk the eggs first. Then whisk throughly all together.
Wash and cut fruit, whatever you choose. Lightly grease a 2 quart dish, I used an 8×8 sized one. First layer banana (if you want) then layer half the berries or other fruits you picked. Pour dry oats mixture on top, then pour wet ingredients over top. Then layer with the rest of the berries! I attempted to make a pretty pattern on top (the silly designer in me). Bake for 30-45 minutes until the mixture is no longer runny. Check this by pushing the container side to side after baking and if it doesn’t slosh around you are done baking!

The best part is to eat it warm. Let it cool after baking but dig in as soon as you can or reheat before you eat! Haha.
