ENERGY CHOCOLATE CHIP BALLS
This week I have felt the dire need for some energy. I was inspired by a coworker to make these little energy snacks. I have been so tired this week (and it’s only Wednesday, yikes).
I made this recipe months and months ago and seem to have forgotten just how easy and delicious these guys (or girls) were; referring to the chocolate chip energy balls, duh.
I scrolled through my sugar & sweets pinterest page, which let me tell you is probably the longest of them all (what me & sweets??), to find this exact recipe. I remembered that I had originally substituted an ingredient the first time I had made them. The recipe calls for “flax seed” but I used almond meal, and I did it again this time! It is a great substitution, I bet you could even use flour if you really wanted to.
These delights are no bake which is just so fun. I love no bake goodies, it’s easy AND you don’t have to use your oven to bake and take extra time to do so.
The only extra thing on these energy balls is that you need to refrigerate the mixture before you form them into the rolling balls. But we all know that is pretty simple.
energy balls
ingredients:
1 cup dry oats, not cooked!
1/2 cup peanut butter (I used natural Jif)
1/3 cup honey
1/2 cup chocolate chips
1 teaspoon vanilla essence/extract
1 cup unsweetened coconut flakes (or sweetened)
1/2 cup almond meal
directions:
1. measure all ingredients and place into a medium sized bowl (the order of ingredients does not matter)
2. mix with a wooden spoon or spatula until well combined (this is mainly for the honey/peanut butter)
3. refrigerate for 30 minutes to 1 hour
4. roll into quarter sized balls, careful not to smoosh (I made about 20 of these but you can make them any size that you want to)
I hope these give you some energy. I think that reason they are called “energy” balls is that the oats & peanut butter give a good kick to your system and tell you to WAKE UP!
That is probably totally wrong but in my opinion it works. I really enjoy that these can also be eaten any time of the day; have them for breakfast, as a snack, or even for dessert.
Since I have made these energy bites I have eaten them on all three of those occasions. And take it from me, they were great everytime!!
