enchilada bake

I have blogged about so many Mexican dishes, this one is by far one of my favorites. I decided it was time for a little switch-a-roo from the traditional enchiladas I make almost every two weeks. I’ve been eyeing this recipe on my pinterest for weeks and I finally decided to give it a go, I’m so glad I did.

This is an enchilada bake without tortillas but with all the same great flavors as regular enchiladas. The original uses quinoa (I’m still on the fence about that) but I used brown rice instead and it was totally scrumptious.

I thought this was still on the healthy side with the onions, green chilies, and black beans. I love the toppings the come with Mexican food, another way to increase your healthy veggie cravings. I love topping enchiladas with shredded lettuce, tomatoes, and fresh homemade guacamole (click that link to find my new go-to recipe).

This recipe calls for cooked shredded chicken, I used leftover Rotisserie chicken I bought at HT and it was wonderful. If you don’t want to pick up a chicken from the grocery store, roast your own or cook chicken breasts with a little olive oil, lime juice, and taco seasoning in a pan, then shred.

This recipe makes a lot of food, it is perfect to reheat or serve a large family or group. It’s a warming homey dish that’s meant to be eaten on cold winter days.

[Enter the not so healthy part of this meal –> CHEESE!]. I used a little less cheese then the recipe requested, I will share my healthier version with you. If you want something even healthier and more clean don’t use all of the cheese that is suggested. It will be just as flavorful without it.

I served my enchilada bake with tortilla chips and a little bit of light sour cream. I suggest the chips, that little crunch in there is so on point.

Make this for your weekend quick fix while this freezing cold weather is hanging around!

Also don’t be shy to mix it up however you like, use quinoa if you want, throw in some canned tomatoes, use other types of beans, or even corn could be added. I like to change up the dishes a little bit and make them my own (we all have different tastes and preferences and this is easy to switch up).
