EASY BAKED CHEESECAKE

The end of this snow day weekend felt like the perfect time to tell you about the most delicious decadent yummy easy baked cheesecake I have
EVER had. Yes, I meant that.

This Easy Baked Cheesecake has been one of all time favorite desserts to share with you on Ambs Loves Food.

Let me be honest with you for just one second… this was my first and only baked cheesecake I have ever made.

For starters, who thinks baking a cheesecake sounds like a nightmare that is way too difficult for the outcome? Did you raise your hand because I sure did.

I have always felt confident in my decision to stay very far away from baked cheesecakes because I have always felt they are complicated,
to time consuming and just plain difficult to make.

This Easy Baked Cheesecake just changed my cheesecake-ing ways.

My cheesecake-ing ways were some pretty simple days that involved things like:

this super easy super delish lemony NO BAKE Cheesecake with Wild Blueberry Jam (um yum right?)

or this NO BAKE Fresh Raspberry Lemon Cheesecake (so fresh!)

or even this all time fav of mine which is most likely the easiest of them all NO BAKE Chocolate Chip Cream Cheese Dip (the. best. ever.)

Are we seeing a pattern here? NO BAKE is almost the ALF way when it comes to desserts, because duh why not?

But to tell you the truth, if I had to choose which Cheesecake out of all of those to make again, it would be this Easy Baked Cheesecake all the way.

The best thing about this cheesecake in particular is that its not like a normal cheesecake out of NY, it is NY style but it has this super light and airy extra layer on top that just booms so much sweet flavor.

The top Cheesecake layer is made from sour cream, sugar, and vanilla essence.
It is so light and fluffy and compliments the more dense cheesecake layer so perfectly.
Which then melts in with the slightly crunchy vanilla wafer buttery layer.

VANILLA WAFER WHAT UP, for real though best base ever.

The simply sweet sour cream layer makes this Cheesecake no longer ordinary but full of more fantastic flavors.

This Easy Baked Cheesecake was so moist (couldn’t think of any other word, sorry).
The texture was soft but not too soft, velvety but not firm, luscious (oh yeah) and the perfect chilled version of any Cheesecake you could ever imagine.

My beautiful sweet fiance can attest to this case I am making in trying to convince of you of the pure goodness and sweetness but not overly sweet magic of this Easy Baked Cheesecake.

I made this for his 25th (SAY WHAT!) birthday and he loved it. The request came directly from him as he is over all my NO BAKE cheesecakes and wanted a real one (okay). Well, baby I hope you got what you wanted and more with this cheesecake because I definitely did.

EASY BAKED CHEESECAKE

Ingredients
  • BASE
  • 1 box vanilla wafers, smashed
  • 1 stick butter (114 grams), melted
  • FILLING
  • 3 8 ounce cream cheese (1/3 less fat), softened
  • 1 cup white sugar
  • 4 eggs, separated
  • TOPPING
  • 16 ounce sour cream (light)
  • 1/2 cup white sugar
  • 1/2 teaspoon vanilla essence
Instructions
  1. BASE
  2. Add melted butter to wafers.
  3. Form into springform tin, pushing sides 3/4 of the way up.
  4. FILLING
  5. Preheat oven to 350.
  6. Beat cream cheese, sugar, and egg yolks until smooth.
  7. Beat egg whites separately until stiff.
  8. Fold egg whites into cream cheese mixture.
  9. Place into springform tin and smooth it out.
  10. Bake for 30 minutes, turn off oven and let cheesecake stand for 1 hour inside.
  11. Remove cake. Preheat to 400 degrees.
  12. TOPPING
  13. Mix sour cream, sugar, and vanilla until smooth.
  14. Top cheesecake with sour cream mixture and bake for 10 minutes.
  15. Remove cool and refrigerate until chilled.
