And if you’re wanting something AMAZING but with almost little to no effort, this recipe is just for you! We all need those easy desserts where you “just can’t even”. I read this recently in a new cookbook I purchased, Feeding Little’s, which I just love! After reading it, I instantly fell in love with the saying “just can’t even” because we all have those days with or without kids!

Who remembers Dunkaroo’s?! If you didn’t know Dunkaroo’s (combination of rainbow chip and marshmallow) are coming back to stores in cookie mix and frosting tubs. Maybe you already noticed?!

And that’s where we find ourselves with today’s post.

A lil Dunkaroo flavor, some cream cheese, and a chubby little sneaky hand…. COUNT ME IN!

Or in all seriousness; a premade cookie mix and premade frosting made 10000% times more flavorful by adding a block of cream cheese to each. Yes, two blocks of cream cheese!

The cream cheese folded into the cookie mix takes these babies from cookies to cake-cookies. It’s like you’re bitting into a fluffy tall cookie but it’s a little more dense and cake like, but not flat like a cookie cake. I think “cake-cookie” is the best way to describe it, and it’s quite an experience!

Adding cream cheese gives a lighter fluffier spin and puffs these up to create the “bars” in Dunkaroo Bars! I just love cream cheese flavor in anything and everything.

Can we all just agree that there is nothing greater than cream cheese frosting…? It cannot be beat.

This version is so simple by using the already made frosting tub and whipping in a softened cream cheese. BUT if you’re looking for a scratch version, this homemade cream cheese frosting is my absolute favorite, I’m obsessed. Just toss some sprinkles in it to make it “funfetti”.

I’m totally on a funfetti kick lately, they’re just SO FUN! And of course Ollie was obsessed with the bars (did you see his chunky little hand earlier trying to sneak a little taste?!). He’s just like his Mama and loves all things sweet and sugary, can you actually blame him?

These bars are quite a delight so serving them with coffee or tea is an absolute must. It really brings out all the flavors and is the best accompaniment, especially with the savory flavors from the cream cheese. I truly think having the cream cheese in these is a must so it’s not overly sweet aka don’t leave it out!

As a note these need to bake longer than the cookie mix suggests, see note in the recipe for more details!

DUNKAROO BARS

Ingredients

  • 1 DUNKAROOS COOKIE MIX
  • 1/3 CUP BUTTER UNSALTED + SOFTENED (NOT MELTED)
  • 1 LARGE EGG
  • 2 8 OZ CREAM CHEESE SOFTENED
  • 1 TUB RAINBOW VANILLA DUNKAROOS FROSTING

Instructions

  • PREHEAT OVEN TO 350 F DEGREES
  • COMBINE COOKIE MIX (FOLLOW INSTRUCTIONS ADDING 1 EGG, AND 1/3 CUP SOFTENED BUTTER) WITH 1 8 OZ SOFTENED CREAM CHEESE, MIX WITH A WHISK OR WOODEN SPOON UNTIL FULLY COMBINED TOGETHER
  • TRANSFER TO A GREASED 8X8" BAKING DISH
  • BAKE FOR 20 MINUTES AND CHECK CENTER WITH A TOOTHPICK, IF BATTER IS STILL RAW ON TOOTHPICK, BAKE 5-10 MINUTES MORE UNTIL IT COMES OUT CLEAN IN THE CENTER
  • WHILE BARS ARE BAKING, WHIP SOFTENED CREAM CHEESE IN A STAND MIXER (OR USING A HAND MIXER) UNTIL FLUFFY AND SMOOTH WITH NO LUMPS
  • ADD IN FROSTING TUB AND WHIP TOGETHER UNTIL FLUFFY
  • ONCE BARS ARE BAKED, COOL DOWN BEFORE TOPPING WITH CREAM CHEESE FUNFETTI FROSTING

Notes

*NOTE: these follow the cookie mix instructions with 1 egg and 1/ 3 cup softened butter
**NOTE: these need to bake longer than the instructions on the cookie mix as they're not small cookies AND have added cream cheese, start with 20 minutes and keep adding 5 minutes until the middle of the bars are set and a toothpick comes out clean with no raw batter
