If you’re stuck at home, pregnant, you missed all the Apple Cider Donuts at Trader Joe’s this year and all you want is a little apple cider donut covered in MOUNDS of cinnamon sugar, you make this cake.

And this cake is no ordinary cake. It is the BOMB!!!

I’ve never made a better apple anything before.

It just hits all the right notes. This Cinnamon Sugar Apple Cake is the perfect cinnamon sugar blend to apple to cake and it’s incredibly tasty.

You can see the cake is crumbly and light and with the shredded apple it’s soft and flavorful without being too apple-y.

A thin cinnamon sugar topping makes you feel like it’s accentuating the cake flavor and not overtaking it completely.
Although the more cinnamon sugar, the better in my humble opinion!

Personally, I do not like overly bold apple flavor, I also don’t like big pieces of apple that aren’t soft after baking so this cake was a win win win win win WIN.

Also this cake is important for a few other reasons:

  • Honey crisp apples in there, there is no better apple (sorry not sorry)
  • Golden butter box cake mix, who has time for from scratch cakes these days?
  • Tastes like Fall without the pumpkin (definitely a converted Pumpkin Cream Cold Brew girl over here!) but still

CINNAMON SUGAR APPLE CAKE

Ingredients

CAKE

  • 1 BOX GOLDEN BUTTER CAKE
  • 2 HONEY CRISP APPLES SMALL/MEDIUM

CINNAMON SUGAR

  • 1 TABLESPOON UNSALTED BUTTER
  • 1/2 CUP WHITE SUGAR
  • 1 TEASPOON CINNAMON

Instructions

  • PREHEAT OVEN TO 350 DEGREES, SPRAY A 9X13" PAN WITH COOKING SPRAY AND SPRINKLE FLOUR ALL AROUND TO CREATE A NONSTICK SURFACE. BANG PAN SIDES WITH YOUR HAND OVER SINK TO GET RID OF EXCESS FLOUR.
  • FOLLOWING THE BOX CAKE DIRECTIONS: COMBINE BOX CAKE MIX, EGGS, UNSALTED BUTTER, AND WATER. MIX TOGETHER WITH A STAND OR HAND MIXER.
  • USING A GRATER/SHREDDER, SHRED APPLES WITH SKIN ON. TAKE HANDFULS OF SHREDDED APPLES AND SQUEEZE OUT EXTRA LIQUID OVER SINK. ADD TO CAKE MIX. FOLD IN GENTLY UNTIL COMBINED.
  • TRANSFER TO BAKING DISH. SMOOTH OUT TOP.
  • MELT BUTTER IN A MICROWAVEABLE BOWL, ADD IN CINNAMON AND SUGAR AND MIX WITH A FORK UNTIL WELL COMBINED. SPRINKLE ON TOP OF CAKE SURFACE EVENLY.
  • BAKE FOR 45-50 MINUTES, CHECK WITH A CAKE PICK OR STICK AT 40 MINUTES, SHOULD COME OUT CLEAN WITH NO WET BATTER.
  • LET COOL AND CUT INTO 12 PIECES!
  • SERVE WITH WHIPPED CREAM OR ICE CREAM.
