CHUNKY VEGGIE GUACAMOLE
I am not sure how many kinds of guacamole exist…
But what I do know is that I have about 3 kinds of guacamole on this blog not including this one. I just can’t get enough of the stuff and every few weeks I find a new one that takes the cake.
This guacamole comes from my bestie Blair and she made it for us at her awesome beach house a few weekends ago. It was so delicious, fresh, and chock full of veggies.
Blair’s version of guacamole is super ripe avocados mixed with chunky chopped sweet yellow onion, orange peppers, tomatoes, and fresh squeezed lemon juice. The avocados were smooshed and mixed with the chopped ingredients until they were smooth and silky. I looooved this technique because I always tend to leave the avocados in my guacamole a little chunkier and in pieces.
I have also never had peppers in a guacmole so this was a fresh new spin on a guac and it was awesome. You have to love peppers to love this guac, they tend to taste very strong and take over the guac slightly but it rocks and I enjoyed it.
I remade this guacamole for AU and I when we got back from the beach. I used red peppers in my version. I stuck with sweet yellow onion, lots of tomatoes, and included the freshly squeezed citrusy lemon juice.
Lemon juice in a guacamole is da bomb dot com.
For real though.
I’ll be honest this guac was gone in seconds at the beach, it was devoured because it was that good. Seriously that good.
I have gone away from my former guacmole recipe, some smashed avocados w/ salsa and lime juice. There’s nothing wrong with that recipe, it is still delicious, I am just circling around chunky guacs right now. But I’m sure I’ll be back real soon.

CHUNKY VEGGIE GUACAMOLE
Ingredients
- 2 ripe avocados
- 1/4 cup chopped sweet yellow onion
- 1/3 cup chopped tomato
- 1/2 lemon juiced
- salt to taste
Instructions
- Cut, open, and remove avocado halves. Combine them gently in a medium sized bowl. Smoosh then with a fork into the bowl until combined.
- Place all chopped ingredients on top of the avocados. Squeeze lemon juice on top and sprinkle with salt to taste.
- Mix everything together until combined.
Notes
Bright green: ripe
Yellow green: not ripe enough
