CHUNKY GUACAMOLE
If there is one thing I truly deeply love, it’s guacamole.
I have been hooked on fresh guacamole for years now and I just love making my own versions of it. I even learned the trick of how to pick perfectly ripe avocados that are always green. It’s a little harder in the winter to find those perfect green soft avos considering they’re not exactly in season.
My trick however, never disappoints.
The best way to find your freshest/ripest avos is to remove the brown “stem” at the very top of the avo. This is before you buy them obviously! If it is light/lime green it is ripe, if it is yellow or yellow/green it is not ripe enough, and if it brown, it is over ripe.
This will always help you get soft, squishy avos that will taste great every time.

All of those guacamole’s were delicious and still are delicious.
BUT THIS, this one is by far the best tasting, most flavorful, and my favorite of all.
The difference in this guacamole and what makes it so great is the use of lemon juice instead of lime juice.
Also the avo is chopped in thick chunks and is not mashed giving you a lot of avocado in each savory bite.
AU and I ate this entire guac and almost had no room for our delicious mexican fiesta with these carnitas! (you should also give those a try, they are easy and magical).
I used sweet yellow onion because it is what I had on hand, but the original recipe called for red onion. I think either one would be perfect for this. Use red onion if you want a more strong onion flavor or the yellow onion if you really just want the avocados and lemon juice to shine!
Pick a guacamole for any occasion, but if you want a crowd pleaser for those avocado lovers, this one is a winner.
