CHOCOLATE CHIP ICE CREAM SANDWICHES

I have found the most perfect dessert that exists. I am obsessed with chocolate and ice cream and I found the best way to enjoy them both:

A friend referred me to buy these ice creams from Trader Joes (have I mentioned I love that place?). 2 huge chocolate chip cookies smooshed with vanilla ice cream in between and rolled in mini chocolate chips. Heaven, is that you?

After I purchased my first box of 4 and ate them in no more than 4 consecutive days, I decided that the 21 grams of fat in each ice cream sandwich was just not going to cut it for me. Even though the whole box only costs $3.99!!

This needed to change especially with this healthier lifestyle I’m trying to enjoy (one that includes ice cream, cookies, and chocolate). I’m not perfect!

I decided to pull out my most beloved ice cream at home, 1/2 the fat Edy’s, and make my own chocolate chip ice cream sandwiches that took a huge knife to those 21 grams.

The main point here was feeling better about eating an ice cream sandwich more than once a week. Goals people, goals.

And if any of you know me at all, I had to go all out, even rolling my own sandwiches in mini chocolate chips because in all honesty there is no other way.

For some reason the day I made these AU and I decided we would freeze a ton of ground beef, chicken breasts, and enchiladas WHILE I tried to freeze these babies as well. Long story short, the ice cream basically melted all out of the cookies and we lost the majority of that creamy goodness.

My easy fix: place the cookies without the ice cream in a bowl and cover them in what? MORE vanilla ice cream.

Problem solved.

Although my ice cream melted, these were suuuuuupper easy! 

I used my most favorite chocolate chip cookie recipe and once they were cool, calm, and collected I layered them right up with ice cream.

It’s a layering process: start with one cookie, pile high with ice cream, top with another cookie, and roll the sides in mini chocolate chips.

I think the effort is definitely worth the reward here.

And isn’t it like the greatest feeling ever to make something like this that is BETTER than the store bought version? I feel accomplished. Not to mention the happiness I feel from gorging one these one of a kind sandwiches.

To make these go even further than you think they can, I sliced them right in half.

I couldn’t say goodbye to them without pro-longing there stay. And I also might have made really huge cookies which led to really huge chocolate chip ice cream sandwiches. But hey who cares, it’s Summer!

Chocolate Chip Ice Cream Sandwiches

Print Recipe
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • ingredients for chocolate chip cookies
  • 1 tub 1/2 the fat vanilla ice cream
  • 1 cup mini chocolate chips

Instructions

  • First bake all of your cookies, should be about 16 cookies (or an even number). Let them cool completely (seriously).
  • Pour mini chocolate chips in a wide shallow bowl, set aside.
  • Once they are cool lay 8 of them out flat on a cutting board, tray or platter. Scoop 1/2 cup ice cream onto the bottom half, press down with the second cookie.
  • Roll ice cream sides into the mini chocolate chips to coat.
  • Place back on the tray/board/platter to freeze. Freeze uncovered for 6 hours then place in a ziploc to store and freeze.

Notes

You might want to turn your freezer settings higher while you first freeze the ice cream sandwiches, then turn it down once they are frozen together.

      These cookies are my absolute favorite, they are always my go to chocolate chip cookie! They were perfect for holding a ton of ice cream.
