I love a good stir fry. I’m always interested in finding great healthy recipes that are easy to make without spending too much money on a take out.

I’m talking specifically about asian food here; thai, chinese, japanese, no matter what kind I always seem to be craving some yummy asian food that is not actually a take out.

And I’m always up for trying new recipes.

The recipe I am showing today is a simple chicken stir fry w/ sliced red peppers. It is an easy one pan sauce where I used the same pan for the chicken, the sauce, and the peppers. I obviously used another pot for the noodles. But come on that’s close enough to a one pot meal, right?

It can’t get any easier than this… “bread” (I say bread in quotes because its a little dunk in egg and a roll in a little flour) then mix the sauce in a little bowl pour it on top and cook some noodles.

That is literally how complicated it gets.

I am in love with an easy step meal and I can’t get enough of the simplicity with huge flavor. 

The noodles are awesome for this stir fry, I used whole wheat spaghetti noodles (you can substitute any rice you like instead). I make them as a simple version of lo mein noodles. I boil the spaghetti noodles normally, then drain them, place them back in the pot and cover them with soy sauce, sesame oil, garlic, red chili flakes, and SESAME SEEDS.

Oops did I mean to write that in capitals, yes I did.

I put sesame seeds on everything. Everything. They’re like this little heavenly crunchy golden piece of goodness. I can’t go without them when I make anything at home that slightly relates to asian food.

Getting back to that whole one pot thing I claimed earlier… it ends in one big pot (so it is a one pot meal!).

 

Let’s talk about the sauce; it’s really spectacular. It’s a little spicy, sweet with honey, and complex with ground ginger flavors peering through. As always with my recipes, you can omit what you don’t want and add what you do.

When I make any recipe I tend to remove the things I don’t like (AU and I might be slightly picky) and add in what I do. In this case, I don’t like fresh ginger (it’s way too strong) but I don’t mind ground ginger.

What do I do… I substitute ground ginger for ALL fresh ginger, tada! It’s that easy.
