CHICKEN MAYONNAISE SALAD

Welcome to the best chicken salad you will ever ingest. 

Yeah I went there. 

It’s not just your cut and dry bland chicken salad. It’s got some texture, some fabulous flavors, and some ooomf.

I first had this deliciousness at a party and my friend Sarah had made it. Once I learned how simple the method & ingredients were, I had to give it a shot. And not to mention the fact that most of the ingredients are heathy and good for you.

Above, you can see the fresh green veggies and the bright vibrant colors that come from natures goodness. The greens are a mixture of celery and green onion. Simple but flavorful.

The night that I made this recipe was literally epic. Let me just explain why. I, Amber Lee, hand touched/ripped apart/shredded my very own roast chicken (by myself). This was quite an accomplishment for me. I didn’t have Austin to break apart the bones… Gross. So I was pretty proud to say the least.

My culinary skills are improving every day!

chicken salad
1 roast chicken, picked and prodded (hand shredded is best- I bought mine from HT original flavor)
4 stalks celery, chopped
1 bunch of green onion, chopped
1 cup red seedless grapes
3/4 cup light mayonnaise
S&P

directions:
1. Pull apart and shred your chicken, place into a medium sized bowl
2. Chop celery and green onion, place on top of chicken
3. Cut grapes into four slices and cover on top of chicken
4. Season with S&P
5. Cover with mayonnaise and lightly mix!
6. Add more mayonnaise if you prefer, it’s up to your taste buds!
7. Refrigerate for at least 45 minutes to let flavors merry

{serve with crackers, toasted baguettes, grill it on a panini, or make a toasted bagel with fresh lettuce & tomato}

Just a few of my favorite ways to eat some chicken mayonnaise (or as it’s referred to in the US of A; chicken salad. I guess I need to call it that since I am an American citizen now! ;))

If you’re looking for a healthier option for this recipe, substitute plain Greek yogurt (fat free) for the mayo or even do a half & half of both. Remember not to expect mayo taste if you do decide to substitute!

I just love the creaminess of this chicken salad, and you can’t argue with a serving of fruits & veggies in the meal!
