CHICKEN CAESAR SALAD
If there is one thing I try to stick to it’s indulging in one homemade salad at least every two weeks.
That’s normal righhhht?
Living with a man who doesn’t exactly fancy fruits and vegetables with every meal is quite difficult for me.
Obviously I am referring to my love AU, if you don’t know who he is or who AU is… he is my boyfriend of
almost 4 years now PHEW. Can’t believe it has been that long!
But he will usually do whatever he can to stay away from veggies, so I have to get creative.
When I make a salad for us I feel like I have to almost shove it down his throat and force him.
Now I’ll be honest with you… It’s not like I’m a huge supporter of salads myself. Just being honest.
Or fruits and vegetables if I’m laying it all out on the table for you.
I’d rather eat chicken tenders and fries, but hey who wouldn’t. We all know the dreams of junk food
are not really realistic.
I know we have to eat healthy, so when we do and when I force us to, I try to dress it up as best as I
can.
Here we have a lightened up chicken caesar salad with homemade creamy caesar dressing and of course
the must have croutons and parmesan.
This is my kinda salad, and apparently it’s AU’s too.
My creativity for salads comes in the form of some type of charred piece of meat, in this case it is charred
simple salt, pepper and olive oiled chicken. Sometimes simple is just the best thing.
In my salads there are always additions as well, like I mentioned earlier: the dressing, croutons, and extra
parmesan. I can’t not include those things.
I know this might seem like a simple salad and something not very interesting, but let me tell you just how
absolutely wrong you are.
This salad was fantastic. AU ingested his entire bowl of greens (win for me!).
I believe the dressing is what really makes it into something special. In my opinion, bottled dressings are kinda
fading out.
I love whipping up a quick light and creamy dressing in minutes. It’s worth it. In this case
it’s an easy blended dressing with fresh lemon juice and fresh garlic. The flavors from the fresh ingredients
elevate the salad making it worth a meal.
Can’t beat that.
CHICKEN CAESAR SALAD

Ingredients
SALAD
- 2 large chicken breasts
- 1 tablespoon olive oil
- 2 heads of romaine lettuce
- S&P
- seasoned croutons
- parmesan for serving
DRESSING
- 1/4 cup lemon juice, freshly squeezed
- 1/4 cup light mayo
- 1/4 cup grated parmesan
- 1 small fresh garlic clove
Instructions
SALAD
- First trim all fat from chicken breasts and use a mallet to flatten slightly. Season with salt and pepper.
- Chop/wash all lettuce and place into 4 bowls/plates.
- Use a large skillet to cook chicken breasts. Heat the olive oil till hot. Cook chicken breasts 2-3 minutes on each side or until cooked through. Remove and let rest.
- Once it has rested for 5 minutes slice into strips.
DRESSING
- Combine all dressing ingredients in a blender, blend until smooth.
SERVING
- Cover lettuce with croutons, layer with chicken strips, and top with grated parmesan.
- Drizzle with dressing and serve.
