BUFFALO CHICKEN LETTUCE WRAPS
The hotter it gets, the more perfect these BUFFALO CHICKEN LETTUCE WRAPS are!
Easy baked chicken marinated in spicy buffalo sauce is the best way to achieve spicy-ness and ultimate flavor. By soaking the chopped chicken chunks in the sauce, it provides a great base for the panko bread crumbs to stick too.
You can even drizzle some MORE buffalo sauce on the finished Buffalo Chicken Lettuce Wraps if you’re really feeling spicy!
What’s really great about this recipe is that the base is lettuce (obviously) but the wraps are topped with super flavorful toppings. No secret here about me being a “topping queen”. It’s always all about the toppings peeps.
The spicy crunchy chicken is garnished with only five types of toppings :)
First up, juicy gourmet baby tri-color tomatoes for optimal crunch and natural sweetness. Crumbled feta is next (you can also sub crumbled blue cheese!) because what is food without cheese. Freeze dried chives are a great way for easy flavor and super easy to store in the fridge. Fresh sliced avocado is a no questions asked addition, so creamy and the best texture. And lastly, cool ranch as the drizzled dressing, blue cheese is just as great if you’re a blue cheese fan!
All of these toppings paired together create the most optimal delicious, textural, crunchy, creamy, smooth recipe.
And just so pretty and vibrant!
This recipe is so versatile and can be adjusted to any food aversions. Use cauliflower instead of chicken to make this completely vegetarian. Make sure you use gluten free panko bread crumbs to make this completely GF. For dairy free or vegan options (see above) and use vegan or soy cheese & dairy free ranch dressing.

Ingredients
- 1.5 LBS CHICKEN BREAST, CUBED IN BITE SIZE PIECES
- 1/2 CUP BUFFALO SAUCE
- 2 CUPS PANKO BREAD CRUMBS
- BUTTER/BIBB LETTUCE PACKAGE
- 1/2 CUP GOURMET TRI-COLOR TOMATOES, SLICED IN HALF
- 1/2 CUP AVOCADO, CHOPPED
- BLUE CHEESE OR FETA CRUMBLES
- RANCH OR BLUE CHEESE DRESSING
- CHIVES FOR GARNISH
- BUFFALO SAUCE FOR DRIZZLING
Instructions
- TOSS CHICKEN BREASTS AND BUFFALO SAUCE TOGETHER, PLACE IN FRIDGE FOR 30 MINUTES.
- WHILLE CHICKEN IS CHILLING, PREHEAT OVEN TO 375 DEGREES.
- PUT BREADCRUMBS INTO A SHALLOW DISH AND TOSS CHICKEN CUBES IN CRUMBS, COAT WELL.
- PLACE COATED CHICKEN ON A PREPARED BAKING SHEET (WITH COOKING SPRAY).
- BAKE FOR 30 MINUTES UNTIL BROWNED & CRISPY.
- ASSEMBLE WRAPS WITH TWO LETTUCE LEAVES, CHICKEN, TOMATOES, FETA, AVOCADO, RANCH & CHIVES!
- DRIZZLE WITH BUFFALO SAUCE FOR EXTRA SPICE.
