BRUSSEL SPROUTS WITH APPLE CIDER VINEGAR SAUCE
I tried my very first Brussels sprouts in Vegas at this amazing steak restaurant called Craftsteak. They were served family style and were cooked to perfection.
As I bit into my first baby green cabbages (what I like to call them!) I was hit with so many different flavors. I found myself tasting sweet first then I tasted a vinegar flavor and it ended with a saltiness which had to be the bacon.
These specific Brussels sprouts were mixed with huge bacon chunks that created a lovely texture with the soft creaminess of the vegetable in all.
Let me get to the reason of this post… I wanted to replicate this recipe and actually found something similar online!
Brussels sprouts with apple vinegar sauce.
So here’s my version!
Those little things are just so cute! I didn’t realize how tiny they were.
I was able to grab some advice from my coworkers, they suggested that I cut these babies in half and bake them in the oven to give them a nice roasting!
I cut them in half and used some olive oil and thyme to roast them nicely!
I then moved onto the sauce once they were in the oven. The sauce is simple, it’s some measurements and some mixing! Just grab a small saucepan and a whisk!
This sauce was something new for me! It’s based on apple juice and cider Vinegar. I opted out of using apple cider and chose to use some sweet apple juice instead but still kept the apple cider vinegar in my recipe.
ingredients:
1 pound Brussels sprouts
3 tablespoons olive oil
S&P
Thyme sprinkles
1/2 cup cider vinegar
1/2 cup apple juice
1 tablespoon chopped onion
2 tablespoons chicken stock
4 tablespoons butter
Directions:
1. Trim the Brussels sprouts, removing all outer leaves, then cut in half & wash
2. Place onto a baking sheet, pour olive oil over and sprinkle with S&P and thyme
3. Place into oven at 350, bake for 40 minutes (flip/toss halfway through)
4. Start the cider sauce, place all ingredients except the butter into a small sauce pan
5. Heat over high heat and let it boil, turn heat to medium and continue to simmer
6. Mix with a whisk and continue to let simmer for about 5 minutes
7. Whisk in butter in 1 tablespoon increments
8. Remove Brussels sprouts and toss in sauce!
