BREAKFAST SANDWICHES
This has been on my mind for weeks. Although, there hasn’t been much motivation behind the making. You ask me “why”? I’ll tell you why.
When I want to make something, I want it right then and there. Right afterwards. But this, this is different. This is not for right now, it is not for later, but it is for later later later (one morning).
Therefore my motivation to make these is almost non existent… until today!
I honestly wanted to just eat these all up right then and there. And the bacon smelling up the entire house was mouth watering all on its own. AU caved and had one piece of bacon. I mean you can’t make bacon and not eat it, right?
These my friends are worth it, and I have just showed you your easy breakfast for the week.
Breakfast sandwiches are a must for a productive day full of energy and brain power. I wanted to make something easy for AU and I to see if these are worth the prep at the beginning of the week. I choose to sleep instead of make myself breakfast, and more often then not, I miss out on an important meal.
The point of these sammies is to pre-make them, freeze them, defrost them, toast them up and devour an easy hassle free breakfast for our busy workdays.
The prep is simple and mainly just involves your oven and 3 pans: 2 cookie sheets and a cupcake pan –> not for cupcakes though :(.
Have you ever had trader joe’s bacon? ERrrrrrmeaaaghaaad it is incredible. The best there is.
1: it is 40% less fat 2: it is uncurred 3: it is nitrate free AND 4: it doesn’t shrivel up like an old man.
I kid you not, it is the best bacon I have ever had and I just want to shove my face in a bowl of it. That’s normal right?
Please go out and get this bacon, it may be pricier but your body and taste buds will thank you (I promise).
Now that I have ranted about bacon, I’ll tell you how to throw these sandwiches together.
To freeze these babies, once they are frozen individually on your cookie sheet, wrap them in tinfoil and place in a freezer bag (per my instructions in the recipe card). To defrost, take them out the night before you plan to nom and let them thaw out.
When ready to eat heat in toaster oven for 15 minutes in tinfoil at 350 OR microwave for 1.5 minutes on high. You can also heat in a real oven for 15 minutes thawed, or 25-30 minutes from frozen status.
Oh and if you don’t like bacon (I think we have no takers here) just remove the bacon and make some cheesy egg mcmuffins. Mcdonalds would be proud but sad because instead of waiting in the drive through line you have your VERY OWN better egg/ bacon mcmuffin.
And that gives me pure joy.
Sub sausage, turkey sausage, or turkey bacon (if you are trying to be healthy).

The TJ bacon is just so so good! I hope you enjoy it.
I just cracked the egg normally into the pan and baked as is, I didn’t break the yolk. The egg yolk settled at the top of the egg whites and baked really well. If you prefer to eat them right after making the sandwiches I would suggest baking the eggs just 10-12 minutes for a runnier yolk!
And I am sure breaking the egg yolk and maybe mixing it would be great too!

What a great idea! & love the tip about TJ bacon. Who knew? One question – did you break the yolk before baking or no?
