BLACK BEAN SALSA

A healthy recipe…. I know what you’re thinking, Amber does healthy?!!!

And yes I do, here it is!

 

It’s a black bean salsa with lots of yummy goodies in it.

The nice thing about this dish is that its easy, simple, and it doesnt take very long.

The best way to eat it is to let it sit for a while in the fridge to let all the flavors run together.

 

I like to serve it with sour cream and chips. The recipe says to serve the dip with doritioes.

That sounds good too!

 

The nice thing about this recipe is that I halfed it because the whole recipe is a lot of food for one.

black bean salsa

2 cans black beans, drained & rinsed

1 can (11 ounce) whole kernel corn, drained

1 can (11 ounce) petite diced tomatoes, with juice

1 small red onion, chopped

1 avocado, chopped

1/4 cup cilantro

2 teaspoons red wine vinegar

salt & pepper to taste

directions:
combine all ingredients, add avo last! Mix well.

 

My favorite part is the avocado. I have to have a piece in each bite because its so delicious!!!

I have to give credit to my mother for the recipe (she knows everything and makes everything the best, my dip didn’t even measure up…)
