beer ball park nachos
Normally I make myself ballpark nachos with “nacho cheese” made from scratch (AND it’s always awesome) but…..
Tonight I made this same meal with a spin on the cheese, I used beer to enhance all the flavors of this messy meal.
Another spin on this indulgent pick me up is that I used some yummy veggies and not just meat, cheese, and sour cream.
I like to build and layer my nachos. I think it gives more flavor and fun as your digging around trying to get a little bit of everything on that one tiny tortilla chip.
I LOVE NACHOS. I really do, just had to get that out there. I enjoy myself some chips and cheese. Normally I require melted “real” cheddar on my nachos when I eat out or get take out because I am not a lover of all those fake cheeses. This recipe is not that kind of nacho cheese, this is the real deal with real shredded cheddar, so lets get started on the “how to”.
The sauce for this recipe is real simple and easy. It consists of cornstarch, milk, beer, and cheddar cheese. Of course you can just stick with milk instead of beer for an alcoholic free version!
This meal is great for dinner, appetizers, football games, and parties!
ingredients
tortilla chips
1 pound ground beef
1 taco seasoning packet (less sodium)
1 cup shredded cheddar cheese
1/2 cup milk
1/2 cup beer (I used heffewizen)
4 teaspoons cornstarch
romaine lettuce
pickled jalapeño
chopped tomatoes
black beans
1/2 cup light sour cream
2 teaspoons lime juice
paprika

directions
1. start by browning ground beef in a medium saucepan
2. add taco seasoning once browned and follow directions on packet using water
3. while beef is browning start prepping all veggies; cut up lettuce into thin strips, chop tomatoes, and jalapeños
4. layer tortillas in a thin line on foil on a baking sheet
5. start cheese sauce; mix milk, beer, and cornstarch in a small pot using a whisk on low heat
6. while meat is browning and cheese sauce is bubbling; mix sour cream with lime juice to thin out and add some flavor
7. add pepper, cheddar cheese, & paprika to cheese sauce
8. heat black beans and bake chips at 350 for 5 minutes
9. start layering nachos with meat, then cheese sauce, sour cream, lettuce, jalapeños, tomatoes, and black beans
Eat immediately!
I took photos of my layering process but yours can be different entirely. Layer these babies however you want to!
Make this meal for yourself, your significant other, or your family. It’s the perfect fixer upper for some yummy snacking.
Now if you’re not so much the veggie kind.. you can just make this with meat and cheese. That’s the way my boyfriend would make it. And I have to admit I enjoy this recipe just as much without all those additions, shhh don’t tell!
