Growing up my mom used to make us her delicious Baked Banana Bread quite often. We were always quick to eat it warm straight out of the oven sliced with softened butter slathered on top, which is definitely my favorite way to enjoy it.

Bananas are not my favorite fruit, actually they’re my least favorite. The smell, the taste, I just can’t handle it. I have some serious bad memories of running cross country races where I had to choke down a quarter of a banana for potassium before the race started. Needless to say, those memories are NOT good ones.

BUT there are three ways I can stomach banana. The first is this Baked Banana Bread, the second is this creamy Banana Pudding and the third is the most delicious candy; Banana Laffy Taffy’s.

Yes one of those ways is fake banana flavor but this Baked Banana Bread is all real.

Brown sugar adds a slight nutty sweetness that marries wonderfully with the mashed ripe bananas in this Baked Banana Bread recipe. Chopped pecan nuts give this tasty bread a nice crunch that provides wonderful flavor and texture. And most importantly this bread is moist (sorry for that word!) and keeps its shape without drying out in the oven or being under cooked.

This Baked Banana Bread has a slight banana flavor when it’s cooked that doesn’t taste too much like the fruit but instead is just a slightly sweet ingredient mixed in. It totally appeals to either side, lovers or haters of bananas.

To summarize, this recipe is the best of the best and trust me because I have tried a multitude of Banana Bread recipes.

This one takes the cake :)

Once the bread is baked, it keeps well when sealed properly. I like to reheat it slice by slice (the Toaster Oven is perffffect for this) and put a little pad of butter on top to really make it a little more decadent. Because honestly, who doesn’t love butter?
