BAILEY’S CHOCOLATE CHEESECAKE
Cheesecake is the absolute best thing in the world, aside from maybe Ice Cream, but this Bailey’s Chocolate Cheesecake is giving us life today.
Anything with chocolate and cream liquor has our ear immediately. Honestly, whose not a fan of alcoholic flavored food? Is it just us whose obsessed or is there a following out there (we hope so!!)?
Pairing something like a creamy velvet smooth Bailey’s and chocolate to create a cheesecake is just one of our many favorite things. Not to mention this Bailey’s Chocolate Cheesecake just got all that much better because it’s a no bake cheesecake.

Cheesecake is officially AU’s absolute all time favorite dessert. First comes this basic scrumptious Easy Baked Cheesecake but if we’re all being honest here we think this one has taken the “cake”. He’s not the first person to jump up and down when he hears dessert (like someone else we all know) but he’s also not shy to “share” a few bites here or there.
And if there’s oreos involved, like this Oreo Cheesecake he is normally all in, to share that is.
Let’s get more into this cheesecake and talk about what makes this the best one in the world.
Bailey’s Chocolate Cheesecake has an oreo sugared crust that’s just to die for. It’s base is the perfect crunch with the oreo’s and icing blended together. White sugar is a new addition to this crust to give it a finer texture and extra crunch for the base of this cheesecake.
This recipe has the most decadent filling. Four bars of semi-sweet chocolate are melted to provide all the chocolate you ever need. The chocolate is mixed with softened cream cheese, Bailey’s, vanilla essence, and perfectly peak whipped heavy whipping cream. A delicacy that’s just too good not to indulge in, this filling is velvet smooth and so dreamy creamy.

This freezes perfectly, freeze in individual slices and defrost in the fridge for an hour before serving.

Ingredients
CRUST
- -5 OUNCES OREO’S
- -2 TABLESPOONS MELTED BUTTER
- -1 TABLESPOON WHITE SUGAR
FILLING
- -16 OUNCES SEMI-SWEET CHOCOLATE BARS
- -1/3 CUP WHITE SUGAR
- -12 OUNCES CREAM CHEESE, 1/3 LESS FAT
- -2 CUPS HEAVY WHIPPING CREAM, WHIPPED TO PEAKS
- -1/4 CUP BAILEY’S (IRISH CREAM LIQUEUR)
- -2 TEASPOONS VANILLA ESSENCE
- -WHIPPED CREAM AND STRAWBERRIES FOR SERVING
Instructions
- FLIP BOTTOM BASE OVER IN A SPRING FORM PAN, LINE THE BOTTOM WITH PARCHMENT PAPER BEFORE SECURING
- SPRAY PAN WITH COOKING SPRAY OR USE BUTTER TO LIGHTLY COAT
- PLACE OREOS IN A BLENDER OR FOOD PROCESSOR AND BLEND UNTIL CRUMBLY
- ADD MELTED BUTTER AND SUGAR, BLEND UNTIL COMBINED
- PUSH OREO CRUMBS INTO BASE OF SPRING FORM PAN, USE A SPOON TO PUSH DOWN TO CREATE A SOLID BASE
- REFRIGERATE FOR 1 HOUR
- MELT BROKEN CHOCOLATE FOR 30 SECOND INTERVALS UNTIL ALMOST ALL MELTED, MIX UNTIL CHUNKS DISAPPEAR, SET ASIDE
- IN A MEDIUM SIZE BOWL WHIP WHIPPING CREAM UNTIL SOFT PEAKS FORM, SET ASIDE
- IN A SEPARATE BOWL MIX CREAM CHEESE, SUGAR UNTIL SMOOTH, ADD IN MELTED CHOCOLATE AND MIX UNTIL COMBINED
- ADD IN THE WHIPPED CREAM AND MIX ON LOW UNTIL COMBINED
- LASTLY ADD IN THE BAILEY’S AND VANILLA, MIX ON LOW UNTIL INCORPORATED
- TRANSFER FILLING INTO THE CHILLED BASE, AND SMOOTH THE TOP WITH A SPATULA
- REFRIGERATE COVERED WITH PLASTIC FOR 2 HOURS OR OVERNIGHT
- TOP WITH WHIPPED CREAM AND STRAWBERRIES ONCE CUT WITH A DRY KNIFE
