These Asian Chicken Lettuce Wraps are life.
They are the absolute best and I don’t normally like ground chicken recipes. Don’t let that lead you astray.
My friend convinced me to try these although I was skeptical and I can’t believe it took me so long to listen to her (thanks K Dub!)
Let me tell you what these are all about!
Ground chicken is cooked with sweet onions, chopped red pepper, and minced water chestnuts in peanut oil.
Soy sauce with hoisin, sesame oil, peanut butter, honey, and sweet thai chili sauce are mixed into the ground chicken to give a sweet savory kick.
Once the ground chicken is glazed, two pieces of sweet soft butter lettuce are piled high and garnished with chopped salty peanuts and green onions.
For a spicy kick, Sriracha is drizzled on top to complete all levels of ultimate flavor!

Notes
*USE CHOPPED CHICKEN BREASTS IF YOU PREFER INSTEAD OF GROUND CHICKEN. FOLLOW SAME INSTRUCTIONS.
SLIGHTLY ADAPTED FROM: JOY FOOD SUNSHINE
Ingredients
CHICKEN:
- 1 LB GROUND CHICKEN
- 1 TABLESPOON PEANUT OIL
- 1/2 SMALL ONION, MINCED FINELY
- 1/2 RED PEPPER, DICED
- 4 OZ WATER CHESTNUTS, MINCED (USE ALL 8 OZ CAN IF YOU PREFER)
SAUCE:
- 3 TABLESPOONS SOY SAUCE (USE COCONUT AMINOS FOR GF)
- 3 TABLESPOONS HOISIN SAUCE (USE GF VERSION IF YOU PREFER)
- 1/2 TABLESPOON SESAME OIL
- 1 TABLESPOON RICE VINEGAR
- 1 HEAPED TABLESPOON PEANUT BUTTER
- 1 TABLESPOON HONEY
- 4 TEASPOONS SWEET CHILI SAUCE
- 1/2 TEASPOON GARLIC POWDER
- 1/4 TEASPOON GINGER POWDER
TO SERVE:
- 1/4 CUP PEANUTS, CHOPPED
- SLICED GREEN ONIONS
- SRIRACHA
- 1 HEAD BUTTER LETTUCE
Instructions
- WHISK SAUCE INGREDIENTS IN A LARGE MEASURING CUP UNTIL PEANUT BUTTER IS DISSOLVED
- HEAT PEANUT OIL IN A LARGE PAN, ADD IN GROUND CHICKEN AND LET BROWN
- TOSS IN MINCED ONION AND SAUTE FOR 5 MINUTES UNTIL SOFT
- ADD RED PEPPER AND WATER CHESTNUTS, CONTINUE TO SAUTE FOR ANOTHER 5 MINUTES UNTIL SOFT
- POUR IN SAUCE AND LET SIMMER TOGETHER UNTIL GLAZED, A FEW MINUTES
- SERVE GROUND CHICKEN MIXTURE IN TWO WASHED BUTTER LETTUCE LEAVES
- GARNISH WITH CHOPPED PEANUTS, GREEN ONIONS, AND SRIRACHA
- THEN MAKE IT AGAIN NEXT WEEK :)
