BLUEBERRY MUFFINS (PALEO)

After getting caught in the rain just leaving whole foods I was showered in rain, dripping, and freezing. It decided to pour today in the Boro.

So I made half paleo hot chocolate with vanilla almond milk. It warmed me right up! The non paleo was the hot chocolate mix! Oops. But I was then inspired to make my blueberry muffins!

This is a recipe you HAVE to and definitely MUST try. Not taking no for an answer. These are full paleo and are absolutely incredible, especially when warm straight out the oven (I couldn’t resist).

This recipe came from the PaleOMG blog, definitely not purchasing a book with access to that website…

The only thing I changed about the original recipe was that I used chopped chocolate chips instead of coconut!

I buy my paleo ingredients first at trader joes, then at whole foods for what I can’t find. I’m planning on trying Harris teeter next, I believe they sell paleo things! Hopefully a little cheaper.

ingredients:

dry:
1 cup almond meal
1/2 cup hand chopped chocolate chips (dark for paleo) or unsweetened coconut if you prefer
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Pinch of cinnamon
1/2 cup fresh organic blueberries

wet:
3 eggs, whisked first
1 cup almond butter
1/3 cup coconut oil, melted
1/2 cup honey

Preheat the oven to 350 and lay out 16 muffin liners in a cupcake/muffin pan. The recipe calls for 8-10 but I got SIXTEEN muffins out of the recipe. I first mixed the dry and wet ingredients in separate bowls. Then mixed them together. I did it this way because I always believe in baking that its better to mix separate then mix together.

Make sure you mix in all the almond meal with the wet ingredients so there are no dry bubbles in your mixture! I tried to get the blueberries into each part of the mix so that all the muffins had blueberries in each. After all they are blueberry muffins!

The batter will appear more brown then you would think, this is due to the almond butter, do not be alarmed!

I like to use 1/4 cup measurement to measure and distribute my batter. I believe that it’s a great size for each muffin liner and I also think that this will guarantee MORE even muffins overall. No one likes to have tiny muffins and huge muffins.

They came out to be beautiful. I baked mine for 20 minutes. I checked them and poked a few inside at 15 minutes and some were still battery inside. However watch the muffins because your oven could be different to mine. Let cool 5 minutes and remove from pan to cool on a rack alone.

Um yum. These rock. As I sit here I’m fighting eating another. BUT WAIT they are healthy muffins right? At least healthier…

I am going to freeze these for breakfast in the morning. It’s an easy breakfast on the go and will be filling and healthy with some blueberries.

Please make these when you can, it’s will be so worth it!

I think these could be made non paleo as well. Sub peanut butter for almond butter, flour for almond meal. And probably vegetable oil for coconut oil. If you do make these non paleo I want to hear about it and your experience!!
