SIMPLE WHITE CHICKEN CHILI

Todays Simple White Chicken Chili beats the odds of my soup stories.

You all know how I feel about soups.
If you don’t, I’ve mentioned my opinion here: Zuppa Toscano.
In short, it’s all about how I love to make soups and then somehow love to throw them away immediately after they are made
(not really though I don’t like to do that).

It has gotten to a point where AU has literally told me I am no longer allowed to make any new soups, only ones we have made and approved already.
You think I’m joking…

Don’t worry I have another new soup I want to try in the next few weeks as the cold keeps creeping in.

White Chicken Chili is not technically in the soup category, so this one passed through AU’s fingers and I had already tried it before I made it.

My coworker Rachel brought this in for a potluck, it was fresh, full of flavor and vibrantly green.
I just had to get the recipe.
It comes from Gimme Some Oven and it is total of FIVE ingredients.

Yes five.

I’ve always wanted to make a traditional style White Chicken Chili. The ones with corn, beans, and chicken.
I think the last time and only time I’ve made a White Chicken Chili was years ago when my bestie Meghan and I entered a chili contest, we didn’t win but I remember how delicious it was.

But I have that problem with my other half not liking things like corn and vegetables but he can handle some beans.

Long story short this recipe came into my lap and it was easy, simple, and it required a small list of ingredients and I knew AU could handle the ingredient list and beans.
I don’t think I could favor a recipe anymore.

This version of White Chicken Chili is far from the traditional, the base is chicken broth but it’s flavored with Salsa Verde and it is fabulous.

The five ingredients in this soup are…
Rotisserie Chicken
Salsa Verde
Chicken Broth
Great Northern Beans
& Cumin

Yeah I think we could all make that grocery list work, SO EASY!

I made this soup on the stove top and it was ready in 10 minutes. It can also be made in the crockpot with 2 chicken breasts instead of a rotisserie chicken. 
I’m sure it would be more flavorful and delicious in the slow cooker but I just chose the quick route and made it right before we ate it.

Now the 5 easy ingredient list does not include toppings or garnishes… does it ever?

This is where you can totally go crazy in flavor.

I copied Rachel and used Wholly Guacamole instead of chopped avocado (the BEST choice right there),
Plain Greek Yogurt instead of sour cream
Cilantro
Chives
Tortilla Chips

& lastly fresh Lime squeezes

WHITE CHICKEN CHILI

Ingredients
  • 4 cups shredded Rotisserie Chicken
  • 6 cups Low Sodium Chicken Broth
  • 2 cups Salsa Verde (16 ounces)
  • 1 can Great Northern Beans, drained & rinsed
  • 1 can Chili Great Northern Beans, drained & rinsed
  • 2 teaspoons Cumin
  • Cilantro, Guacamole, Greek Yogurt, Tortilla Chips, Lime wedges for garnishing
Instructions
  1. Combine shredded Chicken, Chicken Broth, Salsa Verde, Cumin, and drained Beans in a large pot.
  2. Heat on medium heat until well combined, mix together. Let the chili come to a slight boil and reduced to medium low. Let it simmer for 10 minutes with the lid on.
  3. Serve in bowls with Cilantro, Chives, Guacamole, Yogurt, and crumbled Tortilla Chips on top. Squeeze with lime wedge.
